There is a ton of growth in and around Austin. Some areas offer what you are looking for and some are the complete opposite! We would be happy to help you out any way we can!
I would say...Salado, Belton, and Lampasas are underrated at the moment. Things are creeping that way, but you can still find some good prices for homes and properties. There is also plenty to do in those areas.
I want to have a little property to put some rental cabins or tiny houses on. I also want two CrossFit girlfriends with the same name and a machine gun with a flamethrower under the barrel!
I loved the town in the 70s. Good to know that Salado is still charming
