Level 2: Carne Asada Tacos
Ingredients:
(2) Seasoned Skirt Steaks
(3) Flour Tortillas
(1/2 cup) Good Salsa
(1/2) Onion
(1/4 cup) Cilantro
Seasonings:
Chili Adobo
Garlic
Mexican Oregano
Salt & Pepper
Paprika
Season your skirt steaks well and cook on a griddle or in a pan until they have some nice color on both sides. Remove your cooked steak from the grill and wrap them in foil to rest.
Place your tortillas on the grilled until they get a nice char on both sides. Slice your carne asada to your liking, and place some strips on each tortilla.
Top with your favorite salsa, diced onion, and fresh cilantro.
Level 3: Beef Lengua Tacos
Step 1: Prepare the Beef Tongue
Ingredients:
(1) Beef Tongue
(3) Bay Leaves
(1) Cinnamon Stick
(2) Dried Chilis
(1) Chili Negro
(1) Chil Guajillo
Pepper Berries
Coriander Seeds
Cumin
Add your beef tongue, herbs, and spices to a pressure cooker with some water. Cook for at least 1 hour.
Step 2: Make the Tortillas
Ingredients:
(1 lb) Maseca Azul
(2 Tbsp) Flour
(2 1/2 cups) Lukewarm Water
Add your ingredients to a large bowl and work with your hands until you have a damp, soft dough ball. Add about 1 oz of dough to your hands, press it flat, and add it right to a 400º griddle or pan.
Once your tortillas dry out and start to rise, remove them to a dry towel to stay warm.
Step 3: Make the Salsa
Homemade Salsa Verde Ingredients:
(7) Green Tomatillos
(7) Serranos (Fresh & Dried)
(2) Jalapeños
(1) Chile de Árbol
(1) Chile Guajillo
Add your chilis and tomatillos to the griddle to roast. Once you have a nice char on all sides, add to a blender and blend until smooth.
Step 4: Assemble the Tacos
Remove the beef tongue from the pressure cooker and peel away the outer layer.
Cut the remaining tongue into sections (fatty & lean) so each taco has a balanced mix.
Place the meat onto your homemade tortillas, top with homemade salsa, and finish with fresh cilantro and onions.
