They are indeed 6.5'' and you can get away with 8'' as well, but keep in mind that you need to change the brake line, especially if it is equipped with ABS. For non-ABS models, 10 inches will be the maximum rise including the handlebars.
Yup, stock cables, they are long enough to fit 12 inch bars. Look under the gas tank and take off the plastic trim, the cables are bunched up, so if you organize them properly, you will gain an extra 3 - 4 inches.

Why did you strip it down? Could you just remove the handle bar and add the extension bars?
