      At the independent cafe I’ve been working at for years (and been visiting regularly since childhood) we make a mocha by creating a thick paste out of double cream and chocolate powder, we use glass mugs and scrape the mix round the sides then fill with espresso and steamed milk topped with chocolate powder! Definitely looks impressive!

    As a college student on a budget I don’t have an espresso machine yet.
    I use 125ml of coffee from a moka pot, eyeball 1 table spoon of ghirardeli chocolate sauce, 1 tsp of cocoa powder, 250ml of warm milk and i sprinkle a pinch of smoked salt on it

      You're better off. It's an expensive hobby even if you go the flair route since you'll atleast need a 1zPresso JX Pro level grinder.
      Best stick with moka pot and maybe also grab an aeropress at most. And you're good for both the filter and percolation experience.

      Look on offerup. People are always selling items they don't use enough or never even used. I got a keurig espresso machine for $80. A bit of a splurge but I'll really get good use out of it. Justified expenditure if you ask me 😁

      @@mrscourtneyward Salt cancels bitterness, that's why you often add it to cake or hot chocolate. Just a tiny pinch. Not that you asked but I thought the theory behind why most sweet recepes call for salt is interesting :)

    My favourite coffee places usually put the chocolate sauce that you made into the milk when steaming it. It makes such a lovely and fuller chocolate taste throughout the entire drink instead stuck down the bottom or never throughout the milk foam. It's the best drink I've ever had!

      @@yungbrxkenshire9162 As long as you are using the steam wand correctly, and also purging it after each use, it's no problem to steam milk with chocolate sauce. It's not bad for it and does not lead to clogging. (If done correctly!)

      ​@@chosenone102nothing wrong with the wand on that machine. Aside from taking longer to heat things up than a more powerful wand, it's makes microfoam just fine.

    Mochas are the gateway drink to a lifetime of coffee. Mochas we’re my go-to coffee back in my uni years but I got tired of how sweet they were. They weren’t made this good though!

    After watching this, I melted some dark chocolate baking chips with whole milk in a pan over very low heat. I stirred the mixture using a frothing wand until smooth. Then I combined the chocolate sauce with my espresso shot just like you did in the video, poured my steam milk and it turned out absolutely delicious! Thank you for the inspiration.

    The coffee place I work at rn makes mochas by melting chocolate in with the milk when steaming it so it combines better with the espresso shots and so that the chocolate doesn’t just all sink to the bottom. It’s very yummy!!

      In hindsight, this would be the only way to prevent the chocolate from separating as it cooled.
      What kind of chocolate do you use?
      I'm thinking about trying something similar with Ghirardelli powder & a homemade sauce.

    I use same chocolate as you are showing in the video. 50/50 dark and milk chocolate. I just put a generous amount of it in a milk jug and melt it at the same time as milk is streaming. And afterwords I just add it to espresso shot. Tastes delicious!!! And it is very simple what really hjelps at the rush hour.

    I am gluten free so I had xanthan gum at home and immediately made the frappe, I cannot have any sugar so I used liquid allulose to sweeten the drink, 90% chocolate for the ganache, and I don't have an espresso machine but the local café make and sell a great cold brew concentrate which I used, worked so well! thanks for the ideas

    Very nice video! I usually do level 1 one because it's quick and tastes good. I did some lvele 2/3 stuff in the past using different ingredients, I tend to NOT melt the chocolate in water, I don't like the taste that much. I somtimes just grate chocolate directly into the cup and pour the shot over it. For a very special variation you can add some Grand Maniere liqueur, that's something I learned from a coffee roaster a few years ago!

    Depending on my mood, energy level and time available I range from the simple adding chocolate drinking powder to my coffee to melting real chocolate pieces with cocoa powder in milk into the real good coffee.. But I might be upping my mocha game after this.. Also I appreciate someone who loves mocha as much as I do...

    I make a mocha sauce to begin with cocoa, sugar, water, and a little amaretto. I simmer this for 15 minutes (until it's slightly thickened and the flavors have melded) and then use about 2 oz in a double shot of espresso. Whipped cream is necessary on the top. :D Thanks for posting!! I definitely want to try that ganache mocha.

    Can't wait to try these recipes once it's fall/winter. My recipe for a moh-ka 😉:
    Heat together about 200 ml of milk with three squares of Lindt 70% and add in about 200 ml of moka pot coffee. She's a biggun, so I usually reserve it for the weekend.
    P.S.: don't apologize for enjoying a mocha; it's a serious flavor treat.

    As a rookie Barista, I've been on and off doing coffee for 10 years, I never had any training, instead trained myself while working as a bartender, I've always used Cadbury drinking chocolate powder.
    I usually do my espresso, Steam my milk into cappuccino consistency, pour half of the milk (leaving the foam) into a separate jug, add 2 teaspoons of chocolate powder and stir, add the chocolate milk into the espresso, and top it off by adding a few teaspoons of the left over milk foam, pour in the milk slowly not to break the foam into the drink, then top with the left over foam, and lastly chocolate powder on top.

    I LOVE mochas! They are by far my favorite milk+espresso drink! I typically make mine at home with about 20g of cocoa powder (I will also add about 20g of sugar if it for my wife) mixed with my shot, then milk. Very much Level 1. I will be upping my mocha game after watching this, maybe toy around with chocolates from different origins to go with a top notch S.O. espresso? IDK, I am still very new to espresso at home.

      Chocolate probably goes better with a nice classic medium roast espresso blend than it will with a specialty light roast S.O. coffee

    I use an alternative level!!! I’m lactose intolerant, so it’s either Almond Milk or Coconut Milk, or whatever May strikes your fancy!! Also a few dashes of Cinnamon & Nutmeg, AND and at the end a dash of Vanilla Extract!!

    I need to try the frappe. Looks good but I'd do a quad shot instead of a double shot. I'll try the others as well. I usually just squeeze in some Hersheys into my shots. I'll try them. Yum.

    I make a cup of coffee and add hot cocoa packet or homemade , mix together, than I add frothed milk, I have a frother on my coffee machine (I love it) I'm a chocoholic

    Thank you for this awesome video. Will definitely try level 1 & 2. What can you use as an alternative to the Xanthan Gum?

      you can use Arrowroot or Cornstarch, but they are a little less effective than Xanthan Gum, so you may need more to get the same result.

    another thing i found was really good was to just drop a few pieces of chocolate in the cup before pulling the espresso shot. Same idea as an affogato, but you fully melt the chocolate

    I make my mochas at home by taking some chocolate (usually milk chocolate, usually one of those tiny Dairy Milk bars) Then I cut it down into small pieces/ shavings.
    I put those into my little metal pitcher, and brew the coffee (in my Nespresso) right over the chocolate in the pitcher. Give, it a stir, and the chocolate melts completely into the coffee.
    Then pour into my cup, add frothed milk and a bit of sweetening ( and sometimes whipped cream and a touch of caramel sauce) and I love those.
    I'm in Canada, btw.🙂

    Never thought about making ganache ready to go before, would save a lot of hassle for my morning mocha, cheers!
    being something of a casual without expensive kit... 200ml semi-skinned milk in a milk frother (stir attachment rather than wisk) run it on heat mode. Once done, add 9g Cadbury's Hot Choc powder and put on cold mode (to mix up, jug typically too warm for second heat mode) and use a Nespresso Napoli pod (original line). Mug up and sprinkle some cocoa on top.
    When I feel the need for something more.. Big mug, 200ml Semi Skimmed, 125ml Double Cream (Heavy Cream for US). Whisk attachment in frother and run heat mode on cream, heat milk in microwave/hob. Grate choc (roughly 50/50 mix of Dark and Milk) and add to cream in same way as above. 2 Shots of Nespresso original line Napoli and combine.
    The 2nd one is used very rarely but if you need one you don't really care about the calories. The Napoli pod works well for me as it's high strength enough not to get lost in the choc, but has very low acidity. Tesco Finest Accordo (Str 8), L'or. Supremo (Str 10) and one of Costa Brazilian pods (forget the details on this one) work well for me.

    Thank you for this video. I cut 5g of dark chocolate 65..75%, put it into my cup and make a double espresso, then add steamed milk. Luxurious but not to sweet and fast!

    I used to make my own mocha at home after I descovered how good it is. I was making a mix with cocoa powder/hot chocolate powder/or a combination of the two, with sugar, and mix it all together with milk/cream. Just a little bit. I'd add as much milk I want, and then pour the coffee/esspresso into the cup, and mix it. I ted to put a lot more coffee tho, maybe half of cup. I usually serve it in a big mug.

    I’m usually putting everything in that order , so coffee , milk , then 4 pieces of chocolate and 1/5 of tea spoon of salt .. microwave it almost till it starts to boil .. then I get it out of there and just twist it with a spoon .. 👍
