      Ang original sauce eh green onion leaves or scallion and ginger minced then put boiling cooking oil and lastly drizzle with sesame oil.

      That's exactly how chinese cook Hainanese Chicken rice, a little bit pinkish. Kasi ayaw nila ang dry na texture ng manok.

    have to say my one pot method was a fail. The chicken was still raw and had to be cooked in traditional way to avoid overcooking the rice.

    Yet another Hainanese chicken rice recipe that doesn't tell you the essential ingredient of this dish. If you make this, it could taste nice, but it will not at all be the same taste as when you buy it in Singapore or any other SE Asian country, because you haven't put MSG in it.

    The chicken is not cooked properly, it is raw with streaks of blood. Notice the chicken as you slice the thigh particularly. Salmonella galore! I appreciate your cooking and some other recipes, but regret to say am disappointed with this. You ought to have poached it longer. No need to shock the chicken in ice bath. It's potentially unsanitary. Of all the proteins, one has to be extra cautious in handling chicken! Also missing the traditional haianese chicken condiments and dipping sauces such as ginger-shallots ( minced and doused with hot oil to make, but consumed at room temperature ) and chili jam garlic-sweet soy sauce. You lost me here unfortunately. Hope you don't mind the honesty. All the best.

      Exactly. The uncooked chicken is just 🤢. No thanks. You can cook the chicken correctly until it's cooked thoroughly and it will still taste good!

    Hainanese chicken is cooked 30-40 mins in a very low heat. 25 to 30 minutes of cooking with an on and off flame will make it taste uncooked. And, cooking the rice with a fresh chicken on top is very unhygienic. Sorry.
