I have an inflatable windSUP for 2 years and it do the good job for beginners and intermediates. The main reasons to have it are easy transportation and to have my own gear on spots where I cannot rent it. I have two sails 5.5 m2 and this year I bought 3.6 m2 for my son to learn.

Equipment matters! A RDM carbon mast is much easier to handle and uphaul (lift out of the water which you will a lot) for a beginner than an old epoxy SDM mast. Keep that in mind.
In einer "guten" Surfschule lernt man "Füße hinter den Mast" ;-) bei 17min ist natürlich schwer mit dem "Balast" was sie dann nach der Halse bei 21min von selbst gemacht hat ;-)
A little theory is definitely required, plus simulator work to consolidate moves prior to getting on the water. I teach the RYA (UK) system, which I think works well that way.

Highly recommend using a paddle board to stay close to the windsurfer and to help them get back up wind.
