    Thai Red Rubies Dessert
    Ingredients:
    A. Syrup
    100g sugar
    100g water
    1 pandan leaf
    B. Coconut milk layer
    250ml coconut milk
    100ml water
    2 pinches of salt
    2 pandan leaves
    C. Red rubies
    300g fresh, unpeeled water chestnuts or 200g peeled water chestnuts
    1½ tablespoon water
    red food colouring
    2/3cup + 1/3cup tapioca flour
    Enough water to fill a saucepan for cooking
    Bowl of iced water
    Prepare the syrup:
    1. Place the pandan leaf and water in a saucepan.
    2. Bring the water to a boil and then add the sugar.
    3. When all the sugar has dissolved, remove the syrup from the heat and allow it to cool.
    Prepare the coconut milk:
    1. Place the pandan leaves, coconut milk and water in a saucepan.
    2. Add a pinch of salt.
    3. Simmer for a few minutes and then remove from the heat.
    Prepare the red rubies:
    1. If using fresh water chestnuts, clean, wash and peel them first.
    2. Cut each chestnut into small cubes and transfer to a bowl.
    3. Pour 1½ tablespoons of water into the bowl.
    4. Add as many drops of red food colouring as necessary to reach the shade of red that you want.
    5. Remove as much of the water from the water chestnuts as possible.
    6. Place the water chestnuts and 2/3cup tapioca flour in a Ziploc bag.
    7. Seal the bag and shake it until the water chestnuts are completely coated in the flour.
    8. Coat the water chestnuts a second time or even a third time, if desired. Spray a few drops of water into the bag first. Add 1/3cup of flour and continue shaking.
    9. Once the water chestnuts are well coated, remove the excess flour using a sieve.
    10. Fill a saucepan with water and bring it to a boil.
    11. Place the water chestnuts in the boiling water. If your saucepan is small, work in batches.
    12. Stir constantly to prevent the chestnuts from sticking to one another.
    13. Cook until the chestnuts are transparent and there are no white spots visible.
    14. Remove the water chestnuts from the saucepan and plunge them immediately into a bowl of ice cold water.
    To serve:
    Add the red rubies, coconut milk mixture and as much sugar syrup as desired. Top with ice and serve immediately.
