The larger ones are an inch long with a 3” anal breathing tube.
Are these like parasites? What if the get into drinking water? How likely are they to make an animal or human sick if ingested at this stage?
Not parasites. Most you see in the video were eaten a few days later by Magpies, probably delicious (to a Magpie). Left to mature they would eventually have become a chubby looking pseudo-wasp hover fly.
