the propshaft itself is sealed against the wooden hull and the "open" end inside the hull is above the waterline so water cannot rise above its own natural level and pass the top bearing.

The rudder is probably going to break if it is put under load. Try one made of aluminium.

that needs a much faster motor and maybe a smaller prop, bigger props don't equal more thrust if the torque along with raw rpm is not there to drive it, it just bogs down the motor and creates heat which will eventually destroy your motor. I would seriously reconsider the brushed motor and go brushless, ether way, you need water cooling!
