There are some different foot switches such as the ones below: xkeys.com/commercialfootswitchblack.html www.airturn.com/products/airturn-fs-xtend-2 These are not analog. The best analog option would probably be one of the analog switches that comes in the Logitech Adaptive Gaming Kit, though that is not specifically made for the foot it should still work.
Would the evil controllers thumbstick you linked in the description be compatible with the Victrix Pro BFG Wireless Controller? If I could use a controller like the victrix and have a separate mini joystick that I could hold in my left hand that pairs with a modular controller like the victrix, I think that could genuinely solve my gaming disability issue. It doesn't even have to be the Victrix as long as it's a controller where I could use L1/L2 & R1/R2 with my right hand to leave my left hand free for a standalone joystick. Please let me know
I would check out our videos on the Evil Controller's one handed controller or the Azeron Cyro controller. I think those might work for you based on what you are needing.

They are just more difficult to build compared to simple digital switches that are on/off.

The Quadstick site sells that one. It is the Ultimarc joystick on the Quadstick Shop.

One of the joysticks has a slot where you can place small microlight switches that can be remapped to the triggers.
