    So happy to see this topic since most of my lettuces and plants now in the low Arizona desert Zone 9B. I didn't know they were still edible.

    So glad I watched this John - it's my first season growing and my seedlings indoors bolted...I had no idea the flowers were edible! so I composted them but next time I'll be ready to eat them :) Thanks!

      I made the same mistake a few years back. I believe most flowers are edible, but some are not. Always check ;-)

    Hi John, I live in North Las Vegas. To get rid of the pill bugs I use the small cat food cans. I place the rim at dirt level and put them around the garden. At first they were full of pill bugs when I would check them in the mornings. It cleared up the pill bug issue so fast and now after a few years I never see them.

      @@lizzzarduh you dig a hole and place them in the hole at dirt level and they fall into the can. So right side up.

    People already eat young bolting tops, called Broccoli and Cauliflower. They just have to see that all those florets exist for other brassicas as well.
    I graze the garden during early spring. I especially love chard and kale tops. The purple kales have these beautiful, delicious fluffy florets. Sprouting broccolis are also amazing.
    Mustards do not seem to do that well in my garden. They take too long to grow their big leaves and then are attacked by everything. They make good trap plants for me. They are also a bit too spicy for me, so yep, good trap plants.
    In May now and the brassicas are mostly over. They have a hard time in the high desert and mostly have seed pods or have dried out already. I should have plenty of seeds and volunteers in fall though.

    The "pepper mix" I like the best is a blend of black pepper (predominantly), some white pepper, native Australian pepper seeds and chile flakes

    The bolting greens make really good pesto, which (depending on how you preserve it) can be saved for a long time for use when greens are scarce due to climate

    I'm in Las Vegas too and I love growing Amaranth because it takes the heat pretty well and you can overplant them. That you can thin them out as they start competing with each other. Then I eat what I thinned. I have to admit that I am still having a bit of a hard time not worrying about bugs in my food though because I often go out and kill caterpillars on them ha.

    Oh boy John is this timely just noticed my pak choy is bolting and starting to flower. NOW I know what to do with them. So much helpful to me I was going to just chop it down and ferment and hope for another plant to come out of the stalk Thank you. PS I love my multi cooker too but no way would I fill up any pressure cooker to almost the top. I am an old gal and been using a pressure cooker for decades and decades .. that could clog the pressure valve you know and it is a safety concern. Have had one of them blow the lid right off a longostina and they replaced it for me very strange incident and have no idea what happened

    This video was awesome John! I've really been wondering how good the instant pot is in terms of keeping the nutrients during the cooking process. I was under the impression that it gets too hot and causes the nutrients to be lost.
    You're saying that's not true?

      No, to me brassica tops are not bitter. If you harvested them younger, the are less stronger tasting. Miustard greens & arugula can be more strong. When lettuce bolts, it is more bitter.

    Do you have a recipe for Red Russian Kale? I planted a lot of it because I thought it was pretty, but I'm not loving the taste. I guess I could make kale chips. Anything tastes good with olive oil and seasonings.

      My favourite kale recipes are kale chips of course, and also kale stir fried in olive oil and seasoning, alone or with other veggies and meats, is really good. Kale also hides well in a fruit smoothie; you won’t really notice the kale at all! You could even just juice it and hide the juice in a fruit smoothie if you reaaaally don’t like the taste.

    MY thing is there's cultures who have grown and cooked these foods for thousands of years and were way more healthier than the healthiest raw vegan nowadays. Is it the ground? Because we have more options nowadays to make super soils full of nutrient and minerals. Does cooking food really make it unhealthy?
