Rory isn't the princess Luke thinks she is, but he is right about Dean being unstable and a bad partner for her. And I don't know why Lorelei defends Dean. Shouldn't she want someone better for her daughter?

I don't know what Rory sees in Dean. Intellectually he's beneath her level. Luke and Richard (Rory's grandfather) are right. She can do so much better. Dean has no drive and ambitiion. He will drag Rory down.
