chocolate peanut butter frozen yogurt pops

- chocolate peanut butter frozen yogurt pops! they can be made gluten free, dairy free, and refined sugar free, as well as sugar free and high protein!
for the popsicles:
•1 cup unsweetened yogurt (i use dairy free)
•1/4 cup peanut butter (or other nut butter)
•1-2 tbsp sweetener of choice or 1 scoop vanilla protein powder (i like raw honey or pure maple syrup)
•peanuts or chocolate chips/chunks (i use dairy free and refined sugar free)
for the chocolate shell (option 1)
•6oz dark or semi-sweet chocolate (i use dairy free and refined sugar free)
•1 tbsp coconut oil
for the chocolate shell (option 2)
•3oz unsweetened chocolate
•2 tbsp coconut oil
•1/3 cup raw honey or pure maple syrup
instructions:
1. add the yogurt, peanut butter and sweetener to a bowl and mix until smooth.
2. place 6 dollops of yogurt on a tray lined with parchment paper and place a popsicle stick in each one, being sure to cover the tips of the popsicle sticks with yogurt. top the yogurt with chocolate chips/chunks or peanuts.
3. place in the freezer until the yogurt is frozen. once frozen, melt the chocolate with the coconut oil. if using unsweetened chocolate (option 2), stir in the sweetener after melting the chocolate.
4. remove the popsicles from the freezer and dip each one in the melted chocolate. place back on the tray and return to the freezer until the chocolate shell has hardened.
5. once the chocolate shell has hardened, remove the popsicles from the freezer and enjoy (i like to let them sit out for 5-10 minutes before eating so the yogurt filling is soft).
notes:
•to make them sugar free use vanilla protein powder or monk fruit to sweeten the filling and sugar free dark or semi-sweet chocolate for the shell

Usually Hu Kitchen for sweetened chocolate or I just use unsweetened chocolate and sweeten it myself - recipe and notes on that are in the description of the video!

Do they have to stay in the freezer to store to eat later? I tried this with berries instead of PB but they turned into ice inside, not creamy at all and kept leaking water if you try to “thaw” it a bit to make it safe for my teeth to eat instead of chewing on straight up ice
They should be stored in the freezer. I like to let them sit out and thaw a little bit before eating (5-10 min), so the inside is nice and creamy, otherwise it is a bit icy.
