    Congrats Troy another great fun video! Looking forward to your other types (and more of these of course!). If you “go overseas” with these menu dives, come to Australia! Vue de Monde in Melbourne, apparently the only restaurant in the world with 2 x Master Sommeliers(?), has one of this country’s longest lists (is online) and would be fun to get your read through ☺️

    Great as usual.
    I’m very interested in the cellar building concept. I’m looking to grow mine and would love to know some “buy a case and don’t drink for 10 years” kind of wine that will age well rather than just get older.

    Bollinger 2005 Vielles Vignes Francais, JJ Prum Wehlener Sonnenuhr, DRC 1996 Grand Eschezeaux, Sassacaia 1985 ( best red wine of my life, 1970 Ducru a close second)

    You should check out the the Pluckemin Inn in New Jersey. They have a WS Grand award and a very deep cellar with massive verticals. And I happen to be the sommelier there...unless I had some bad amaro the night before ;)

    Different and actually helpful.
    One of the things that came to my mind while watching was how do you manage a wine list with so many wines by glass? If the clients order different wines by glass after a week there will be a lot of waste, no?

      Great question! A BtG program can see a lot of waste. With a huge BtG list, I assume they either have a preservation system (Coravin for example) or sell at a very high volume. Bubbles in particular can be very tough to hold, but a Sauvignon Blanc can hold in the fridge for a pretty long time while open, though your mileage will vary. Every program is a little different, but controlling the waste on a BtG program is a key component of the job description for a Sommelier/Wine Director.

    Very interesting content. I find your choices eclectic to straight up weird (in a good way), especially with higher budget categories. I would never go with '14 Montrachet.... that would never be ready this early and also Ponsot is not really a proper Montrachet producer (it's negoce for that vineyard I think). Whereas Gruaud Larose 1845....another super ballsy move. I have some experience with USD2-3K wines per bottle but 50k haha...that's another world.

      It's easy to be ballsy when spending imaginary money on hypothetical wine on the internet! Good point on the Ponsot, I tend to give the house a pass on just about anything since I've almost always been impressed. Thank you for watching!

    Loving this series! Just curious, even at higher budget scenario, do you tend to pick wines of "value"? i.e. ones without huuge markup?

      Great question and thank you for watching! I’m the INFINITE category, I tend to disregard the markup and actual (my perception, at least) value of the wine. But it’s a good point - I think I will start to include that as a talking point in the future!

    1933 was a really bad vintage in Bordeaux. The Margaux is probably long gone.

    I’ll never forget my first experience at Bern’s figured this video is the perfect time to tell the story and I’m sure you’ll enjoy it as I have enjoyed this video !
    To start I live in Florida and I was going for my certified sommelier exam which was at the epicurean across the street. So of course, I had to Book a reservation at Berns and I lucked out did the full experience. But the reason I lucked out is the night before I was having dinner in the hotel and next to me we’re all the master sommelier’s and I overheard all of them gawking about 1982 Bolliger La Grande Année…..
    I having just passed my exam knew what I had to do come to find out the price was wrong on the restraunt list so they being Berns of course honored it…. I now knew why they were gawking and I drink 1982 La Grande Année for the price of the regular Bolliger 🥹😅 just thinking how lucky I was to have been sitting next to them and picked that up haha
    Long story short always read the menu and look for mistakes (Just kidding) look for incredible values because man does Berns have them the 1996 Cuvee Catherine I had in the dessert room later that night was the last bottle they told me and for $60-$80 was an absolute steal drank incredibly well never forgot that day and night was a great celebration 🍾
