    DAL DHOKLI
    Preparation time : 15 minutes
    Cooking time : 30-35 minutes
    Servings : 2
    Ingredients
    For Dal
    1 cup Tuvar Dal - soaked (तूर दाल)
    1 heaped tbsp Ghee (घी)
    Salt to taste (नमक स्वादानुसार)
    ½ tsp Turmeric Powder (हल्दी पाउडर)
    ¼ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    1 Bay Leaf (तेज पत्ता)
    2-3 Kokum (कोकम)
    1 tbsp Jaggery (गुड़)
    For Dhokli
    1 cup Whole Wheat Flour (गेहूँ का आटा)
    1 tbsp Gram Flour (बेसन)
    ½ tsp Turmeric Powder (हल्दी पाउडर)
    ½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    ¼ tsp Asafoetida (हींग)
    Salt to taste (नमक स्वादानुसार)
    1 tbsp Oil (तेल)
    Water (पानी)
    For Tempering
    2 tbsp Ghee (घी)
    1 tsp Mustard Seeds (सरसों के बीज)
    ¼ tsp Fenugreek Seeds (मेथी दाना)
    1 sprig Curry Leaves (कड़ी पत्ता)
    5-6 Dry Red Chillies (सुखी लाल मिर्च)
    2 Cloves (लॉन्ग)
    1 inch Cinnamon Stick (दालचीनी)
    ¼ tsp Asafoetida (हींग)
    ½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    For Fried Peanut
    3 tbsp Peanut (मूंगफली)
    2 tbsp Ghee (घी)
    Process
    For Dal
    In a Kadhi add tuvar dal, ghee, salt, turmeric powder, degi red chilli powder, bay leaf and mix everything properly.
    Now cover and cook it on medium heat for 20-25 minutes or until soft.
    Now add the cut roti and add kokum, jaggery, let it boil for 8-10 minutes.
    Now pour the tempering on it and boil it for a minute. Serve hot.
    For Dhokli
    In a whole wheat flour, gram flour, turmeric powder, degi red chilli powder, asafoetida, salt, oil, water and knead a soft dough and keep aside for 5-10 minutes.
    After resting, take a small portion of the dough and roll it into a roti and half cook it on a flat pan.
    And then cut it in diamond shape and keep aside for further use.
    For Tempering
    In a pan add ghee , mustard seeds, fenugreek seeds, curry leaves, dry red chilli, cloves, cinnamon stick, asafoetida, degi red chilli powder and sauté it for a minute.
    For Fried Peanut
    In a pan add ghee peanuts and fry until light golden brown and then add it in the dal.

    my mom in law used to make it just a bit differently but delicious nevertheless. she cooked peanuts alongwith the dal, ginger chili paste and one very ripe tomato finely chopped in cooker with more water so that the dal came out a bit runny and the tomato simply blended in. then she would add a bit more hot water this dal and add half a cup of lemon juice or kokum juice jaggery and salt and bring this to a boil. at this point the dal is very watery. now when it starts boiling she drops the dhokli into it and keep the flame high and keeps stirring till the dhokli starts floating on top and gets small bubbles on it. that is the sign that the dhokli is well cooked. The tadka comes at the very end before serving. the tadka includes ajwain, jeera, sarso, kadipatta hing, black pepper corns and cloves in ghee. Since this is a typical winter recipe, black pepper and ajwain helps in giving warmth to the body.
    she also made stuffed potli dhokli. she made small rounds of the dough stuffed it with mashed peas, carrots, steamed palak or methi leaves mixed with potatoes or paneer or mashed peas again and folded into a potli and dropping it in the boiling dal. while serving it you may garnish it with some spicy sev / mixed farsan or even cornflakes chivda on top for that extra kick.
    this is the most favorite one pot meal in winters in our home.

    The best thing about his recipes is that they are so customizable.. Jisko jaise pasand ho kam jyada kar lo.. Jo nahi kar sakte wo specifically bata diya.. Kahan kanjoosi nahi karni hai..     Chef Ranvir, I am an ardent fan of your recipes. Traditionally the daal has to be boiled and then whisked to a smooth consistency. Secondly it should be very thin watery since once the Dhoklis added and is cooked the daal gets thick. Thirdly the Dhokli too has to be rolled thinner and should be added few at a time or else there is a possibility of a lump formation.

    Sir i am from gujarat and i just want to say that here,in gujarat, the dhokli goes raw directly into the dal after tadka,nobody cooks it before. So if you're making it again, try dhokli as it is and not pre-cooked.😊😊😊😊

    I remember eating Dal Dhokli made by my Amma when I was a child. Now that I'm an adult learning how to cook more Indian recipes, I will be making this for sure (once I finish making your recipe of Langarwali Dal). I just perfected making roti, so this shouldn't be too difficult 😃

    मेरी माँ जब भी दाल ढोकली में तड़का लगाती है तब जैसे ही तड़का लगा और उसे दाल ढोकली पे जैसे ही डाला उसी समय उसका ढक्कन बंद कर देती है जिससे उसका स्वाद दोगुना हो जाता है।।। और ढोकली के आटे में थोड़ा कैरम सीड्स डालती है।।।

    Also we add 1tsp “methi no masalo” to dal which intensifies the overall flavors

    Being a gijju it's my favorite and being preparing since many years. To my surprise all the elements of recipe were same as in a normal Gujarati home not talking about traditional recipe.That's the reason I love your recipe.(Always a touch of mom's recipe)

    I heard once Dal Dhokli called as Indian lentil Pasta by a Gujarati grandmother to her grand children in USA. And, her grand children loved it so much.
    You can add raw peanuts, cashews while boiling the dal preparation. This is comfort food category item.

    In Mauritius we call this “daal pita” .. we accompany this with hot coconut chutney and dry shrimps cooked in hot red sauce! .. 😊👍🏼

      @@rh3308 hi. Sure. Soak dried shrimps. Blend 1 normal onion + 1 teaspoon fried onion + dried red chillies. In a pan add oil+ ginger garlic paste + afew curry leaves + soaked shrimps (remove all water) let cook on slow flame for 5 to 8 minutes to remove the rawness of the shrimps. Then add the blended paste and let cook. Garnish with coriander leaves and chopped green chillies. 😊. Easy recipe easy life.😊

    Me, my daughter and my husband loves dal dhokli and we made it yesterday at dinner. Add peanuts while boiling dal it will taste best and its best served with pure desi ghee and lemon juice. Try it next time you will definitely love it.

    Daldhokli is made from left over daal. Traditional Gujarati daal is made by pressure cooking not by boiling in pan. Also ajwain is the key ingredient in atta which is missing in this recipe.

    There has to be a perfect balance of sweet and sour combination. In the dhokli there has to be chopped methi bhaji, sesame, salt, haldi, ajwain ,hing, garlic paste.
    While cooking dal ,peanuts has to be there my dear Ranveer.
    In tadka, rai, cloves, hing, ginger paste, curry leaves.
    Coriander leaves to garnish.

    Dal dhokli is my favorite dish but this one was way too different than how my mom makes it. Neverthless we are rajasthani so we don't know the actual traditional way for making it. Thanks for sharing the recipe, will definitely make my mom see this video and convince her to make the dish in this style.

    We make bharwa dhokli, aate mei namal moyan daal ke sakth dough( pooriwala) and make small kachori filled with four masalaand some heeng. Boil these in daal and then tadka. Worth trying

    Hello Ranveer, Love to watch and learn from your passionate cooking. However, the Rajasthani - Jain- Jodhupuri Dal Dhokli is made diffently. Im an Andhrite but I love this the most, was treated to this every month by our rajasthani neighbour and shared with us while we bartered our idli/dosa for it. :-). So that version has raw atta pieces -masala flavoured added into the cooked dal. No peanuts, no dry red chillies or gud. Sheer bliss to eat during the rains. !
