Hi Tim! Notes and observations: I made this today, and it's absolutely perfect. I did forget the xanthan gum, and it still turned out wonderful. This recipe makes about 3/4 of a jar of the Heinz no sugar ketchup. I waited until the cooking finished, then sweetened it to taste with liquid stevia. After it cooled I funneled it right back into the clean jar. Wash, rinse, repeat. Like any other tomato-based sauce, any harsh vinegar notes are tempered with adding just a little sweetener and placing it into the refrigerator until the next day. I found a great deal at the dollar tree on the 28-oz cans of Muir Glen organic crushed tomatoes, and ended up getting several cases. I suspect they are going to restock with smaller cans.

I don't care for stevia but Lakanto monkfruit classic works great. And your channel is a double bonus for me: I am teaching myself French so I get to watch you twice and pick up a bit of the language along the way!

I made a batch this morning and it IS a winner but I have one thing I'd do differently next time and thats add the stevia in increments; it seems like all stevia's are NOT the same...mine seems stronger than others and I should've realize that from the get go...I had to add white vinegar and some celery salt to neutralize the sweetness so just in case your other viewers have the same issue they won't have to worry about having a ruined batch of ketchup: SO GOOD Thanks!
Great recipe. Just used this complete recipe and made your BBQ sauce with this instead of tomato paste and no vinegar, no sugar, just added all the rest of the BBQ ingredients. Perfect. (for pulled pork). Glad you're back.

Once I got through half of the ketchup recipe, you earned a new sub. It was that quick. My wife and I have been on and off low carb for a few years. We are planning to go full time keto after thanksgiving. She is much more into the watching macros than I am. We both like learning new keto recipes. Thank you so much for this Ketchup recipe. We have to travel an hour to buy sugar free ketchup. Its always a small jar and expensive. I will be making this recipe now.

Aloha Tim, I made this tonight. I had but a 6oz can of tomato paste in my cupboard. So I added 3.6 cans of water making 28 oz and followed your recipe to the tee omitting the celery seed, which is the only ingredient I don't have. I only had to double the xanthan gum for thickness. The flavor is so spot on delicious! I will never buy sugarfee ketchup again. I'll be sure to try it with the celery seed for my next batch. Thank you!!!!

This looks good, I'm not keto, but trying to reduce sugar, the sugarless ketchup in the store (primal kitchen) is 6.99 for 11oz, also I think this will taste better than the ketchup I made with tomato paste.
Hi Tim! Thanks for the great recipe 😊. Have you ever tried yacon syrup? It’s pretty expensive but I don’t use it often so a jar goes a long way. It’s flavor profile is great with this ketchup. Also, it’s carb count can seem misleading but it has zero glycemic impact. In five years I’ve went from A1c of 14.2 to 5.5 and lost 97 pounds. I wear a continuous glucose monitor so it’s very easy to see how foods impact my sugar. Thanks again for the great recipe

Hi LC! Passata is usually a little too thin for this, I think, but you can try it. Simmer it for longer than I do the crushed tomatoes in the video to reduce and thicken it up. Bon appétit!

You could also turn it into cocktail sauce by adding some horseradish to it
