    CHANNEL UPDATE:
    We decided to divorce with Anni some time ago. There isn’t any drama behind it. We just have so different energy and life goals nowadays that it’s much easier to be just friends. Everything between us is really well and we are still good friends.
    Anni also want’s to get completely out from the TH-cam business and lets me have fun with the company and channels from now on. We don't have any argument about money. We share what we made together and I will continue with the channels from here. So you are not going to see her much in future videos. She said that at least on Hydraulic Press Channel’s 10 year anniversary she is going to make appearance :D
    Since the videos are much better when made together I decided to start work with my new girlfriend Hanna. You have actually heard Hanna on more often than Anni during the last months on HPC. So no need to complain that the videos used to be better before the divorce :D
    The reasons behind divorce have nothing to do with Hanna or any other person than me and Anni.

    I hope that you get our positive feeling about divorce through that video so you don’t need to worry about us.
    Me and Anni are happy with the current situation and how things are going. Getting divorced is really easy in Finland compared to the US for example, so there isn't a lot of stress or crazy amounts of fees and paperwork. We have good memories about the 12 years that we spent together and are now excited to move on to the next phase of our lives.
    I didn’t want to do video on main channels since they are not about my personal life but when "Anni" is suddenly much shorter and has a blonde hair I think you need some explanation :D
    So we are all three doing really well here and no need to feel sad about this in general. I would like that everyone remembers all the great things that we did and are happy that we can now do great things here with Hanna and Anni can find her new passion from somewhere.
    And thanks to everyone that wrote such a positive and warm comments on this weeks Beyond the Press video about this. It's a great privileged to have such a great viewers and community around us. I talked with Anni today about her new business adventures and we had a great time planning those. Anni was also really happy to see such a warm response from you all to this situation.

      It's really cool. Try to compare knives of the same type, but from different steels. For example, carbon, against stainless steel.

    I think the Tefal got a pretty strong advantage due to its blade shape being sloped. Every time it was pressed it would slide into a diagonal cutting angle whereas the other blades seemed to sit at 90 degrees for the most part.

      Yes, it pushes the other blade to the side. Only 90 degrees angle is fair.

    Loved the video I always enjoy seeing knife related content on the channel.
    While these results are very interesting, it's worth mentioning that it's not a particularly practical. A thicker knife with cheaper steel will probably win out in most cases here. The tougher steels tend to be more brittle under pressure. Even though their edges last longer, they aren't maid for pressure against hard surfaces.

    One factor I see affecting the results is that when the blades aren't positioned perfectly one will get a bit of a slicing action which gives it an advantage. A proper test would need to control for that.

      That's what it looked like with the fiskers. The whole edge was made with a cutting angle more than the others which hand more flat planes near the handle so as the pressure increased the fisker was able to push some of that along its whole edge better than the others.

    I like the concept, but I think some knives got an unfair advantage when they got to hit the other knife at an angle. So if you do it in the future, it would be good to put them in fixed positions and so that they come at a 0 degree angle towards each other (looking horizontally). Interested in seeing similar comparison for more expensive knives

      I noticed that, as well. Typically the top knife would come down at an angle, whereas the bottom knife was being held in place and straight by gravity. Due to the angle, the shear loads that the top knife would apply to the bottom knife cause large chips to break away from the bottom knife, or in one case, cause the blade to crack.
      Keeping the blades parallel to each other is key to this test, it would appear.
      Still fun to watch.

      Si pero la idea tambien es justamente conseguir los productos comerciales. Es decir en motos por ejemplo no comparas una enduro contra una de calle. Comparas una enduro de marca a por uno se marca b. No se si soy claro. Si x marca vende un cuchillo para cortar carne la marca b vende un cuchillo mas liviano o mas fino pero para el mismo rol ahi se compara. Si tiene error de diseño es justamente xq es inferior.

    Entertaining AF even though the thickest blade might have an edge over the other one (haha!), but might not perform as well with food, for the same reason!

      I was thinking the same thing. My favorite kitchen knife is a thin carver. A Henckels twin. I also have a twin chef but it's too much of a butcher knife. So I only use it for ridiculous chopping jobs. Like the time I attacked a butternut squash. Those things are like trying to cut wood. For day to day cutting the carver is fine.

      We do have one extreme example of "knife" in the video, the hydralic press itself (or rather those connecting bits). Very blunt, very massive, very hard. They crush normal knives. 🙂

      Another reason is that high end knives are meant to be sharpened to keep their superior edge, and that means a softer steel. That is ok as long as you are not trying to cut bone.
      Meanwhile the main selling point of cheaper brands (apart from price) is "won't need sharpening", which means a harder steel to keep a useable (if not very good) edge for enough time before replacing it.

    I was really excited about this video, and it blew my expectations away. I was interested in this like it was a real sport. Really entertaining, and actually solid commentary (which is missing in most hydraulic press videos I've seen).
    My small fairness gripe is that the spines of the knives have different angles, so some came down at an angle because of the flat slots they were in, which I'm sure impacted some matchups, but a great video regardless.

    Awesome idea. Could you clamp the blades so that the intersecting edges were horizontal? The tfal seemed to have an advantage as it was pushing the other blades to the side.

    Nice idea! As a huge pocket knife buff, it would be great to get more information on exactly which steel the blades are made from. D2, S110v, N690 etc. I know kitchen style knives don't always go into detail of steel materials but if you could repeat with pocket knives, it would be really interesting to see.

      would some testing lab like to get involved, not a tester my self but isn't just exposing metal some sort of acid, seeing how it reacts, or something, there must be for on site one us testing kite or something, or anyone could just label cheap crap-trash-rubbish steel and anything they wanted? any charge what they like for it too?

      That being said, rigidity is not the only parameter involved in making a kitchen knife good. For certain types of cutting, a soft sharp blade may adapt to the task a lot better than a hard thick one. For example, for cutting vegetables in thin slices or for skinning fish-fillets.

    A great idea! And good fun! But this doesn't show how good each knife is at being a knife. Most of the really good knives out there are very brittle and will lose this kind of test easily. STILL. Love it =)

    I think the tfal had an advantage due to the angle of the blade. Each time it twisted in the mount causing it to slice rather than a straight on compression.

      I think I saw upper knife move along the lowers edge, which mean bottom one was getting an advantage as new area kept getting exposed to damage over time.

    I think the angle of the tfal had a lot to do with being able to resist damage and cut into the other knife. I'd like to see this with axes and others, but consider the movement in the tool and angle of attack for the next one.

    I think one reason that blade won is because of the angle of it. It was more curved, and actually managed to make more of a slicing action instead of just being pressed straight on.

    Interesting video, definitely some things to be learned here. I hate to be "that guy" but just a heads up for anyone buying cutlery, no steel or knife is "perfect". In this type of test the knives that are "tougher" are probability softer steel that would dull faster and therefore need sharpening more often. Generally, harder steels, which by default are harder to sharpen, are more brittle and prone to breaking or chipping but will hold a sharpened edge much longer. Steel quality is a spectrum of properties and where you want to be depends on the specific application.

    This test has so many variables that just turn it into "What knife resists more being pushed in steel?" But different knives use different types of steel. Stainless, German, Japanese, high carbon, martensitic alloys, all to allow different skills. And you need a more precise jig to keep those edges in straight

    You should notice that this knife fight says nothing about which knife is really the best in regular use, a knife with a thin blade will lose this contest while it is actually the one which cuts the best, and a knife with a very hard blade will perform bad in this contest because it tends to crack resulting in large chunks breaking off, while in reality it will be the one which stays sharp for a longer period of time.

      Don't. These are not brand tips. Just in the common market there are at least four different types of steel for cutlery, which provide different results for different needs. This isn't an indicative test.

    Very interesting.
    I'm wondering what would happen with a custom Damascus chef knife forged by a blacksmith or with some quality EDC knives,, but that's a different budget level. 😳
