Im mexican american and cook these very often in our carne asadas. Cant go wrong with smoking them, and grilling them over direct fire also. They come out very juicy and tender if done right. I usually cook them over fire flipping accordingly to get a nice crust and then finish them off indirect heat. Let them rest for about 10 - 15 mins and enjoy.
I bbq them on my Webber kettle salt pepper garlic you want to taste the beef not mask it, sear them first then wrap in some foil and your good to go! 👍

Oh my gosh, Hollywood style! That's what I'm missing. I have seen ribs cut that way in a few restaurants and couldn't put my finger on what was different when I made them. Thank-you for the info, and looks amazing!
A lot of folks turn their noses up at beef back ribs, but, don't be afraid to cook these guys up. It's more of a quantity vs. quality-type thing, kind of like cooking chicken wings. Yeah, they're not going to compare to beef short ribs. But man, these make for one heck of a snack during a boxing/UFC match. Good stuff!
HEB sells them and calls the "finger ribs." Excellent, cheap cut that's the essence of traditional bbq. A lot of people scoff at them due to the lack of meat, but they're great if you're on a budget or if you're new to BBQing.

Nice cook Bradley. Around the Holidays I can get beef prime rib bones from the people cooking a prime rib roast, but not wanting the bones. My local grocery store butcher shows me where he puts them. These are just so beefy. The flavor is amazing. Thanks brother.

I eat keto, so I don't add any sauce to the ribs. Also, I do cut the membrane because I find it too fatty and rubbery otherwise. I also don't cook them quite as long....I don't like them to be a bit more firm as opposed to fall off the bone. I season them, but add coarse salt at the last 10 minutes to make them what I call "Pretzel Ribs". They look like a pretzel, golden brown. They have a nice salty (not too salty) crunch on the outside with a ribeye-flavored juicy tender on the inside.....give it a try....they are great

Dear Chud's BBQ: Question - why not put your thinned mop sauce / vinegar mix into your spray bottle or sprayer and spray it on as opposed to mopping (as we all know how much we hate cleaning the mop)? Asking for a friend

How long do you cook them over fire flipping them ? Indirect until temp or feel ? Do you wrap em for the indirect part ?
