I cooked this for my parents and in-laws yesterday and it tasted delicious. Thank you for the recipe!!! I did not add yoghurt, instead of coriander, seeds are used coriander powder, and instead of 3 cups of rice I used 2.5 since I like it more meaty. It turned out delicious. Thank you again.

Make the yakhni on the stove in a pot and then when u add rice just cook it on high to med high flame with the lid open. Once you start seeing rings in the rice turn off the stove, cover and put to dam. Hope that helps :)

W/Salam. I am so happy to see you tried and enjoyed the recipe. For 6 cups of rice and yakhni the temperature should remain pretty much the same. That being said, if you have "Rice Mode" in your instant pot, use that for your rice. Even though the same can be achieved with just the pressure cook mode, I find the Rice mode to be always more precise. I hope this helps ^_^

I mostly cook my rice for 10-12mins and then let them sit in the steam after manual pressure release. That ensures fully cooked yet separated grains of rice. Hope that helps /)
As soon as the pressure is up, you revolve/turn the knob from sealing to venting to release the pressure manually. Thats QPR or Quick Pressure Release. NPR ( natural pressure release) on the other hand is when you let it be and let the pressure release naturally which takes 8-12 mins
Hi there, I have tried and watched so many recipes from you. Great work always! This time I am not really convinced with the method. Im sure it turned out amazing as ur other recipes. For me I could not understand the second time dum thing? How does that work when ur rice barely has any water left and why is that necessay. Almost kills the practicality of having an instant pot. The dum at the end helps the rice cook through even more properly. After the 10min are up on rice mode they still need a little time so i release the pressure to ensure my rice dont turn mushy n let them sit at keep warm for atleast 10-15mins. Its the same as when u cook pulao or biryani on stove, u need to let it stand for a while so u have the perfect “khilay khilay chawal” n after that dum the rice stay khilay howe they dont clump up. But you can skip it if you like. I always remember my mom everytime biryani or pulao was made it had to be put on dum with a tawa underneath n noone was to open it, this is what this does 😅
You can surely do that but here in the video i talk about nutrition dense broth n broth that equals to 24hr cooked broth on stove. By doing that i am getting all the nutrition from those. Plus pressure cooking my meat for 30mins would completely disintegrate it. I need my boti to stay in shape but i want all the nutrition from the bone. The broth i showed in the video was to exemplify how i do it. Thats why its before the whole process cz if you notice in the middle section where im talking i do say if you dont want to do that use a potli instead while pressure cooking the meat you are using.
Also in traditional yakhni pulao you always make the broth separately n usually for hours to get the most benefit n flavour. But with IP it reduces that time to 30min to max 2 hours and its dump n go. No watching the pot for flame or water level. If you have that done, the process actually starts from when u fry the meat. With yakhni on hand(which is barely any work) its all under 30mins. Even with all the step its mostly dump n go. Sometimes if i dont have any bones or broth in stock i actually just let the spices simmer on my stove around breakfast n by the time i am ready to start cooking, thats done anyways. I hope it makes more sense now :)
So in short agr bones ki nutrition ka nahi hai tou just start from the meat frying part n use a pouch of spices or even fry them all with meat if you dont mind them. I wanted to give all the ways for everyone cz alot of people wont even consider a pulao without long cooked broth n some would be fine with the pouch. Its all preferential thats why so many points before hand which might have caused confusion. Skip making yakhni n dum at the end, it will still be really good i promise. I hope i was able to clarify n convince you to give this a try 😅

Thank you so much. I used baby goat meat for this but follow pressure timings i used for Biryani in the beginning. Then you can follow the same recipe but just reduce the amount of coriander seeds by almost half to what the recipe calls for :)

Since I am making it from beef pieces I don’t have bone in there. How will I do the first step for the yakani? You said to add the bones with the rest of the whole spices.
Pulao ideally needs to have meat with bones as thats where the richness comes from. But you can make the stock without any bones too with just water and spices

Making it first time in instant pot, will update how it turned out. I made some changed before adding yakhni. I added Red Chilli 1 tsp and garam masala 1/4 tsp. Then added yakhni as I like my pulao a little spicy Edit: it was good, however the instant pot autotime for rice made the rice mushy. Water should be less, add acc to your rice type
Thank you for the edit. Indeed the type of rice really makes a big difference. Thats why in the beginning you might have to experiment a little. I have tried many types of basmati and sella and they are all differnt. Sella is hard to over cook and needs more water in general so a safer option. But one thing that always helps is the finger tip test.
Instant pot ap ko asani de deta hai kyu k apko pateela k samne nai khara rehna perta sara time. Ap timer laga k set ker dain aur apnay kam kerte rhe tab tak. Pressure cooking regular pot se fast b hoti hai. Basically fast hai aur convenient hai
Thats when you dont touch the valve to release the smoke by yourself (instant pressure release) and instead let the instant pot sit to release the pressure slowly by itself n unlock the lid (natural pressure release)
I would suggest trying for 5mins and see how it works. If case you need more time u can always re-pressure. The cooking time also depends on the size of the pieces and age of the animal.
I made this the taste was really nice, but the only problem is my mutton took 40 minutes to cook and rice was uncooked on rice mode 12 minutes, I cooked further 10 min and it was mushy... I have the instant pot 8qrtz.. what am I doing wrong. ?
Hi, did you pre soak the rice? Also when confused just see if the rice are “just dipped” ( the water level above the rice should be approx the size of your nail)

So I followed your recipe 100%. The rice seems a bit uncooked like it’s got a bite to it when u eat and it’s a bit hard. I also left it on keep warm mode for 30 min hoping it might cook in steam. Since the mutton pulao is ready, how do I fix this issue to make the rice a bit more cooked.
@@TheHomeMakerBaker I’ve now put 5tablespoon of hot water and put it in keep warm mode for next half an hour. If that doesn’t work and cook the rice enough, what can I do?

I tried the yakhni in the instant pot, it turned out good, but the mutton was over cooked. I used baby goat legs thats why? Eitherway i think 30 mins is way too much time to cook this, 15-20 mins should be good and then 6 mins for rice.
The meat and the cut you use can have a big impact on the timing as well as the state of meat. If it was fresh or frozen. For yakhni i always use bones and use the meat for the cooking. Whenever i buy a goat leg/shank i ask my butcher to make 3 packs. One with just bones, one with just meat(boneless) and one which has both and i also store them that way. I have the same instant pot, and I followed the exact instructions. My meat went hard and it didn’t cook properly. I cooked the meat further it went dry and hard. What am I doing wrong?
Just wondering why you don't use anything to make your food mildly spicy ? I have watched a couple of your videos and they're only seasoned with black pepper and/or garam masala. They're no red or green chilies at all in most of the recipes?
I do use fresh green chillies but they dont go into everything. I guess everyone has their own cooking style which makes their recipe their own. My food is more about flavour and less about the bulk of spices and oil :)
@@TheHomeMakerBaker I don't like BULK of those things either. But what i meant is that I just made your yakhni pulao yesterday and the yakhni was very flavorful I agree. But after the rice had been added it was basically just bland. I love the way you explain your recipes and I dont mean to disapprove of your method but maybe you can mention sometimes in your video where and how much we could add the red chillies in etc in the recipe for people who like spicy food. I usually do that in the written recipes as well as the spoken. You might have heard me say in alot of my videos that my chillies n pepper are very strong so im using less but you can add according to your spices. The pulao shouldnt be bland it should be as flavourful as the yakhni so maybe double up the spices next time :)

Yes, you can but dont use a huge clump of pieces stuck to gather. Sometimes the pieces in the middle dont cook through properly.

If you want extra yakhni, should you double or triple masala along with the water?
I would double up the masala for upto 3 times the yakhni. You can also let it cook over night on slow cook to get the most out of the spices and bones

I love your recipe! I wanted to ask, what if I use chicken with bones? Same recipe? How long does chicken cook? I see you cooked beef in pressure cook for 6 mins
Thank you so much. I used baby goat meat for this but follow pressure timings i used for Biryani in the beginning. Then you can follow the same recipe but just reduce the amount of coriander seeds by almost half to what the recipe calls for :)

Since I am making it from beef pieces I don’t have bone in there. How will I do the first step for the yakani? You said to add the bones with the rest of the whole spices.
Pulao ideally needs to have meat with bones as thats where the richness comes from. But you can make the stock without any bones too with just water and spices

When the gravy starts to leave oil, make sure to whisk the yogurt else it can curdle.

Making it first time in instant pot, will update how it turned out. I made some changed before adding yakhni. I added Red Chilli 1 tsp and garam masala 1/4 tsp. Then added yakhni as I like my pulao a little spicy
Edit: it was good, however the instant pot autotime for rice made the rice mushy. Water should be less, add acc to your rice type
Thank you for the edit. Indeed the type of rice really makes a big difference. Thats why in the beginning you might have to experiment a little. I have tried many types of basmati and sella and they are all differnt. Sella is hard to over cook and needs more water in general so a safer option. But one thing that always helps is the finger tip test.

Thats when you dont touch the valve to release the smoke by yourself (instant pressure release) and instead let the instant pot sit to release the pressure slowly by itself n unlock the lid (natural pressure release)
Bone in meat is not available where I am, only boneless. how would I adjust the cooking time?
I would suggest trying for 5mins and see how it works. If case you need more time u can always re-pressure. The cooking time also depends on the size of the pieces and age of the animal.

Yes you can. I usually go for 1/2 to 1 inch piece :)

I made this the taste was really nice, but the only problem is my mutton took 40 minutes to cook and rice was uncooked on rice mode 12 minutes, I cooked further 10 min and it was mushy... I have the instant pot 8qrtz.. what am I doing wrong. ?
Hi, did you pre soak the rice? Also when confused just see if the rice are “just dipped” ( the water level above the rice should be approx the size of your nail)

So I followed your recipe 100%. The rice seems a bit uncooked like it’s got a bite to it when u eat and it’s a bit hard. I also left it on keep warm mode for 30 min hoping it might cook in steam. Since the mutton pulao is ready, how do I fix this issue to make the rice a bit more cooked.
Increase water by 2-4tbsp for next time. Also while on keep warm you can add 2-4tbsp hot water so there is extra moisture to absorb. Hope this helps

It should work in most cases. Did you wash and soak your rice?

Thus is a great recipe but it needs fennel seeds (saunf) otherwise the yakhni doesn’t get that specific fragrance that is synonymous with Pulao.

I tried the yakhni in the instant pot, it turned out good, but the mutton was over cooked. I used baby goat legs thats why? Eitherway i think 30 mins is way too much time to cook this, 15-20 mins should be good and then 6 mins for rice.
The meat and the cut you use can have a big impact on the timing as well as the state of meat. If it was fresh or frozen. For yakhni i always use bones and use the meat for the cooking. Whenever i buy a goat leg/shank i ask my butcher to make 3 packs. One with just bones, one with just meat(boneless) and one which has both and i also store them that way. I have the same instant pot, and I followed the exact instructions. My meat went hard and it didn’t cook properly. I cooked the meat further it went dry and hard. What am I doing wrong?
Just wondering why you don't use anything to make your food mildly spicy ? I have watched a couple of your videos and they're only seasoned with black pepper and/or garam masala. They're no red or green chilies at all in most of the recipes?
I do use fresh green chillies but they dont go into everything. I guess everyone has their own cooking style which makes their recipe their own. My food is more about flavour and less about the bulk of spices and oil :)
@@TheHomeMakerBaker I don't like BULK of those things either. But what i meant is that I just made your yakhni pulao yesterday and the yakhni was very flavorful I agree. But after the rice had been added it was basically just bland. I love the way you explain your recipes and I dont mean to disapprove of your method but maybe you can mention sometimes in your video where and how much we could add the red chillies in etc in the recipe for people who like spicy food. Jazakallah
I usually do that in the written recipes as well as the spoken. You might have heard me say in alot of my videos that my chillies n pepper are very strong so im using less but you can add according to your spices. The pulao shouldnt be bland it should be as flavourful as the yakhni so maybe double up the spices next time :)
