I get the exact opposite on my m3 macbook pro. APFS GUID : Write 985mb / Read 834.5 mb EXFAT : Write 1660 mb / Read 890 mb How on Earth is it possible that you get faster speeds using APFS ??????
This is strange I would have thought it m3 would be providing higher speeds and constantly. In your case am not sure what I can do since I do not have the device. I would have played with the formats and find one that's gives the most speed. Maybe the cable you are using is limiting. I try to use thunderbolt 3/4 cables on all my ssds for better consistency and highest speed.
