I like this type of food processing! I myself have a 1 liter jar full of vodka filled to the brim with sultana raisins and some cinnamon sticks and star anise. After a few months they are completely soaked and flavored and I add them to my plain ice cream with some added whipped cream (+sugar), and that's my favorite ice cream 🍨 But without the cinnamon and star anise they also taste very good when soaked in vodka.
Super cool as always, Nick. Would absolutely love to see more of these extract vids. Now that you've done the basics, maybe an idea might be to do a few at a time, with some actual recorded uses/recipes.
Please make more extracts and recipes using them. I made some apple extract but I have no idea how much to use in a recipe. Same with the cacao extract you just made. I have cacao nibs and vodka at home. Hot chocolate with some cacao extract sounds delicious.
I made 3 liters of vanilla extractlike this last month. Definitely worth it, I strongly recommend it! That stuff is so good already, can't imagine how good it will be in a year when it's actually ready lol
You're not joking when you say the commercially produced extracts are expensive! - I just bought 3 bottles of assorted Nielsen Massey ones (from Lakeland of all places - cheaper than Amazon). Would love more videos on other extract making, such as coffee, vanilla etc. Please!
nice i will try its very easy! i used my dry oven baked leftovers from vanilla bean paste (65gr) to make vanilla extract in 700ml vodka, was it too much of vanilla powder? Does the sugar it contained helps the extract or spoils it? i plan to mesh it in 6 months.

Thanks for this video - i intend to try this with bourbon, as i did vanilla with vodka, brandy, and spiced rum but wanted to try some with bourbon; since I'll have it on hand for that, perfect timing to try some nibs! I did have a question: i haven't used nibs before and noticed there are also "raw" nibs (unroasted, it seems). Do you recommend raw, or roasted for this?
I really enjoy you. I would very much appreciate more extracts. Could you use brandy? I often use that to preserve homeopathic remedies so I have it on hand. Not a drinker!

Yes as I mentioned in the video, they will eventually go off. It would take a while though as they’re being suspended in 40% alcohol.
