Shrimp on Sugarcane Appetizer (Chạo Tôm)

  • (English & tiếng Việt) Vietnamese Shrimp on Sugarcane (Chạo Tôm) consists of flavorful shrimp paste wrapped around sugarcane sticks or lemongrass sticks. It is a tasty appetizer for daily meals as well as parties. These shrimp sticks can be fried or grilled.
    The shrimps should be very cold throughout the process so that the texture will turn out right. I recommend putting them in a freezer for about 20 minutes before placing them in your food processor. For a chewier texture, you can add some pork paste.
    Ingredients
    10-12 oz peeled and deveined shrimps
    6-7 lemongrass stalks
    1/2 teaspoon crushed or finely minced garlic
    1/2 teaspoon crushed or finely minced shallot
    1/2 teaspoon crushed or finely minced ginger
    1/4 teaspoon salt
    1/2 teaspoon black pepper
    1 teaspoon fish sauce
    1 teaspoon olive oil (plus more for greasing and frying)
    1 teaspoon cornstarch

    300 g tôm bóc nõn, để lạnh
    6-7 nhánh sả (hoặc dùng mía chẻ nhỏ)
    1/2 thìa cà phê tỏi giã hoặc bằm
    1/2 thìa cà phê hành tím giã hoặc bằm
    1/2 thìa cà phê gừng giã hoặc bằm
    1/4 thìa cà phê muối
    1/2 thìa cà phê hạt tiêu
    1/2 - 1 thìa cà phê nước mắm
    1 thìa cà phê dầu ăn
    1 thìa cà phê bột bắp
    Nếu bạn muốn chạo tôm dai hơn, có thể trộn thêm giò sống. Nếu dùng nhiều giò sống và làm miếng chạo tôm lớn hơn, bạn có thể hấp vài phút trước khi chiên.

    I'm a college student trying to experiment more with cooking and I just discovered your channel. Lemongrass is my favorite herb and i've been looking for more ways to use it than just in broths, so thank you! I'll be trying this next week. I don't have a food processor, though, so is there a way to make it without one?
