    1 cup, in Australia, under the metric system, is 250ml. :: My mum used to use lard wrapped in a cloth to grease the pan for pancakes. She'd rub the cloth over the heated pan and the lard would melt through without leaving too much behind. Worked really well.

  • @jeffroitero4266

    Butter will burn indeed. The trick is... to go with a little oil WITH your butter. The butter gives you the flavor, and the oil keeps the butter from burning.
    I'm sure a lot of people know about it, but I learned it from Sam the Cooking Guy, so hat tip to him.

    • @jeffroitero4266
      @jeffroitero4266 4 ปีที่แล้ว

      @@foragingadventures - It doesn't change the smoke point, but it's not for cooking on high heat. It does stop the butter from browning/burning a good bit and improves the flavor. I used to wrap them in a clean tea towel as each batch was cooked to keep them warm and moist until they were all ready.

    7:39 (Sports commentator voice) Your joining me right now at the World Wide Pancake Championship, with two times UK champion Mr Shrimp. All eye's are on this pancake flipping colossus as we nervously watch him take on "The flip". You can cut the tension with a with a wooden spoon. He's using a very traditional stainless steel slotted turner with a grey rubberised handle. The last thing Mr Shrimp wants is to lose grip of his shaft at this most critical time.
    He's going in for the flip number one..... ABSOLUTELY MASTERFUL.
    Ok, flip number two. Do I detect a nervous twitch there? No, NOPE NOT AT ALL, what, a, flip, there, showing the whole world how it's done.
    It all comes down to this third and final flip now, with top prize of a Tefal frying pan and 5 packets of Aunt Bessie's Original Pancake & Yorkshire Batter Mix™!
    He going for the flip now. Looking good, it's his to lose and OMG I shouldn't had said that as Mr Shrimp fluffs it right up with a foul. Pancake batter all over 1&2. What a shame, but he laughs, shaking off the CRUSHING disappointment he must be feeling right now like a TRUE CHAMP.
    Sorry, I don't know why I thought YT was a good place to try this. I just thought it might be funny if we all had our own personal commentator, commenting of every little detail of our lives. Even the insignificant and mundane like flipping a scotch pancake.

    As a Scotsmen, in my humble experience, pancakes are usually served a few ways:
    1. Warm (preferably) or cold with butter.
    2. Warm (preferably) or cold with butter and jam of preference (but usually a Berry or currant variety for sweetness or tang depending on preference).
    3. Fried in bacon fat mixed with melted butter, quickly to crisp up but also allows maximum soaking up of the butter bacon mix and served with the bacon itself. But NOT with syrup as Americans would do. My personal preference!
    4. Straight from the griddle with no toppings, but a cup of tea on the side because they dry the mouth. My second favourite (but a close contender for first), because the flavours and texture are so much sharper (albeit its not a big flavour item) when freshly cooked.

    You can also scrape citrus with the edge of a serrated knife (roughly perpendicular to the peel) to get zest.
    Although not quite the same as this, I like to use both baking powder and baking soda along with a little bit of some sort of acidic ingredient (vinegar, lemon juice or ideally buttermilk), it produces a sort of double rise batter with the initial baking soda + acid reaction and then the baking powder + heat reaction while cooking. They are extra fluffy and soft this way. You can also drop frozen blueberries onto the uncooked side like you did with the fresh, still turns out great!

As a childishly cruel joke to each other we used to squeeze the orange rinds into each other’s faces and the citric acid gives a brief sting to the eyes. Childish I know but an endless source of harmless pranks we would all get a laugh out of (except of course for the one getting sprayed) 🍊🍊🍊

    I wonder if Mary Berry's batter was a bit thinner, it would have gone further. Of course the pancakes would not be scone-ish at all that way... more toward a thick crepe perhaps. When you squeezed the orange over your plate, I wondered if you ever tasted a modification like that and found it went terribly wrong. I could almost hear you calling out, "Mistake! Mistake! Don't do this on your pancakes!" But alas, it was "even better." LOL And the presentation on the final shot was absolutely artful. Well done, Shrimp!

    It was quite refreshing to see Mike struggle with the cups and spoons. I follow a few cooking channels, some of which have USA or Canada-based hosts. Whenever I want to replicate a recipe, it is usually me having the reverse problem of converting weird volumetric measures to weights (or trying to find out why brown sugar doesn’t seem to exist where I live).

    • @AtomicShrimp
      @AtomicShrimp  4 ปีที่แล้ว +2

      Converting the other way is a bit easier, since you can have any arbitrary amount of metric weighed or volume-measured stuff, but when it comes to cups, you end up with weird fractions that are actually sort of hard to judge (unless you have specific fractional measuring cups too)

  • @Sarah_Grant

    Oh man, I just got a big jug of Vermont maple syrup as a gift and haven't cracked into it yet, who wants to guess what I'm having for an after dinner snack in a bit...😀👍🏼

    My Scottish Grandmother would call these "Pikelets". :)

      Aha. Here in Australia we call them pikelets too! Makes sense, as many Scots migrated in the early days. Pancakes here are large and drape maple syrup over them while hot.

    Adding baking powder to self-rising flour... a bit like adding vodka to beer. No complaint here :)

    I find listening to your voice to be therapeutic. Lowers the blood pressure compared to other YT content. My comment is that the bubbles need to pop & look like moon craters... then it’s the perfect time to flip them over.

    My pancakes never work out. It is amazing how versatile pancakes can be. Shrimp pancakes maybe?

    Shrimp this video was great but I was wondering if you seasoned your cast iron pan to make it non stick? Gentle cover with oil and a few hours in the oven at 230 roughly and it will be out a non stick. I have to do the same for my carbon steel pan and cast iron skillet

      I find that they acquire this seasoning just through use - this one has been in use for a dozen years now and is pretty well seasoned

    Definitely use veg oil but you can also add A PAT of butter to the pan where you plan to plop the batter so that the butter is only going into said pancake.

    Ooh nice! You could probably really easily veganise this, replacing the milk with any plant based milk and the egg with a flax egg (equal parts water and ground flaxseed)

    Are oranges waxed? I always wonder when using orange zest. Always buy unwaxed lemons but never any reference to wax on oranges.
