No, it's not fake.
Yes, in that particular clip, a man is controlling the robot.
However, here is the reason for that: AI learns from data, and we can provide data through multiple methods.
For example, you can feed training data, or you can train the AI directly.
In that clip, the man is training the system on how to use the motors of the robot hand in a correlated manner, similar to our own hand. The robot processes this data and attempts to replicate the actions by itself.
