It's a bit more obvious, the switch, in this interview, probably because the band didn't want to appear 'off'. At this point they were still unsure of whether Paul was well enough to perform or not so they had to appear normal so that if the concert went ahead, people wouldn't suspect anything. It just so happened that the concert was cancelled because presumably a doctor or medical professional had not cleared Paul to go on stage. That's why John comments on the scarf. He would have picked the scarf because he'd already been focusing on Ringo, leaving it to appear as normal banter.
John had another side to him and he could be a real jerk, but I think deep down inside he was a sweet heart. He was brash in order to hide his pain going back to his childhood.
He liked to act tough and as if he didn't need anyone but this interview shows how much john cared for Paul. Paul was very ill here and john wouldn't stop staring at him hoping to make Paul feel even the slightest bit better. Every time john made a joke he kept peering over hoping Paul would crack a smile.
