The only constant is the passion of the artisan, and obaachan is doing this for seven decades. That's a good example of wabi-sabi aesthetics. Real beauty is found on "imperfection". How enticing is a senbei with little "imperfections" here and there. How appealing is a grilled ayu with that ondulating form, salt spreaded unevenly through its body. A rustic clay hut. The fading colors of age. Autumn leaves on a street. Dango is simple, it doesn't ask for fanciness. It complements simple things, like freshly brewed tea. It shouldn't change. We got so many snacks nowadays, so many flavors but a favorite flavor has an emotional gravitas to it. Dango should never change.
This is the reason I love Japanese culture, it’s people, it’s gastronomy. I hope they continue her traditional ways as she retires her place in this society will be remembered with pride and honor

自分も団子作ってたからわかるのだけれど、蒸したせいろって(それも深型!)水分沢山含んでいるからかなり重いし熱い!それに水かけて冷ました後、すのこをのせてひっくり返すなんて思わず「凄い!」って声が出ました。もう「尊敬」とかのレベルを超えてます。
