Perfect mam , one small correction ( Pls dont mistake ) . Brinjal should not be cooked in steam by closing the lid. It should be cooked only in sesame oil ( naal yennai) . Your quantity of oil is very less . 1 KG brinjal easily it would consume 200 to 250 ml of sesame oil . Taste of this would be out of the world . Rest all what you said is perfect mam. Chidambaram kosthu is made only out this ratio Oil Vs Kg of brinjal.
Thanks a lot a lovely recipe my grand father likes it a lot we make it by burning big brinjal but the masala is not crushed and added along with the oil . Red chilli is skipped and green chilli is only used . One additional tip , cut one inch ginger in to small pieces and crush it with green chilli in a pestle and add it after mustard seeds crackle . Another variation is add 1 tomato and put cut brinjal cubes that also tastes superb
