I love at the end of every cooking show, when the cook tastes what he/she just made and slowly nods their head and thinks to themselves "I just spent two hours of hard work on this."
+vortigauntfan I think that's one of the brilliant things of cooking. Spending way too much time on something to get it absolutely right. But when the first bite comes in and you realise it's all so damn worth it.

I got William's book for my birthday so I came to youtube to see if I could find any videos. Great to see him in action! I can't wait to try making the chocolates....especially the muscovado caramel omg.....

I was at the Curley concession in Harrods last year and spent about £80 on chocolate, felt sick and poor, but it was worth every penny.

Is marble table nessesary for tempering chocolate or are there alternative methods?

@Sufia Qistina Mohd Pauzi the process is called "chocolate tempering" you do this to make a more refined and betterlooking chocolate that will stay hard at roomtemperature. its a bit difficult to explain but it has something to do with the crystalisation process of the cocoa butter.
Or you can buy fake chocolate
+CrazyAlpaca4 Some use compound or tempered real choco depending on what its being used for. Generally for actual chocolate desserts and decorations though, it's much better to temper and use real choco rather than compound chocolate.

its a different texture...the chocolate will snap when u bite into it when its tempered. and it stops the chocolate from melting as fast in your hand.

regular truffles are not good....William's are amazing....I got a box of them for my birthday and they are one of the best I have ever tasted! It was heather and honey flavoured if I remember right
@shaddow525 He said it was metal. Metal conducts heat well, so it absorbs the heat from the chocolate. There needs to be no refrigeration under it.

As much as you need to enrobe the truffles with, Once you have correctly tempered the chocolate the remainder will set in a mass block that can be stored correctly and remelted when needed so none is wasted.
Someday I'll make this to my wife.
