Stop with the germs. If you're afraid of germs you can't eat anyplace because one cannot produce great food without using one's hands...gloves are for the hospitals, not the kitchens!
If they wear gloves, the gloves make imprints on the pastries. Plus you are less likely to drop them if you are using your bare hands. Gloves are too slippery

Well, except for industrially processed food, you will see no pastry commis, cook chef, or baker wear gloves in France. Making food obeys a very old tradition, and plastic gloves which have existed for a few decades only so far are not part of this tradition. But no worries to have here, pastry commis, cooks and bakers wash their hands and arms thoroughly before cooking.

My family come from this industry so I understand where you're coming from but it doesn't make it right just because it's France despite them being the King of Patisserie and cuisine which they are in many respects.

I completely agree with you. They are packaging the sweets that no longer goes through a heating process which is against HACCP system critical point.

I went to pastry school, if you maintain very close cropped nails and wash your hands religiously it is actually more hygienic than wearing gloves.
