Making food obeys a very old tradition, and plastic gloves which have existed for a few decades only so far are not part of this tradition. But no worries to have here, pastry commis, cooks and bakers wash their hands and arms thoroughly before cooking.

I completely agree with you. They are packaging the sweets that no longer goes through a heating process which is against HACCP system critical point.

I went to pastry school, if you maintain very close cropped nails and wash your hands religiously it is actually more hygienic than wearing gloves.
