The "New York company" you refer to that makes this type of crust bought the name "Uno's" from the original Chicago restaurant that's been in business since the late 1940's. The restaurant was/is the first to make a thick 'pan' crust for restaurant pizza, a recipe that was brought back from Italy after WWII. The recipe is a combination of white flour and cornmeal and 'rises' in the oven, as opposed to a thin baked pizza crust. The franchised "Uno's" restaurant around the country, as I said, bought the name but (according to lore) NOT the original recipe, so these country-wide locations make an approximation of a true Chicago pan pizza.
OMG! I've just made this, very patiently waited for it to cool and now taken my first 2 bites..... Omg. It's incredible! What a great recipe! It's not a quick one but if you've got the time it's soooo good!
I made this today for a potluck. It was delicious, and a lot of work. Next time, I'll make the sauces ahead, and I'll precook the cheese sauce to give it more body. It got kind of lost in the pie. I cooked and sliced a couple of Impossible Italian-style sausages for the bottom layer. There was room for more toppings, so next time will add more mushrooms, olives, sausage, etc. Fiddling with the parchment was a pain, and I don't think it was needed to prevent sticking. Next time I'll transfer the crust to the pan without the parchment. After 55 minutes, the crust got too brown in my oven; will bake on the top rack next time.

5 Stars. This pizza is a home run! I’m in Canada and try to get to Chicago every other year for the dental convention and my guilty pleasure of deep dish pizza from Uno. (Everyone has their favorite place) This plant based version is stupendous. The pepperoni was good, but, I now have the recipe to improve on for my likes. I did use the pepperoni as a lunch meat tho and it was fantastic with hummus, spinach, tomato and broccoli sprouts on Ezekiel bread. Thanks Jill, your recipes are always amazing!

Your recipes look delicious… Why not just press it into the form rather than trying to roll it out.. I’ve pressed piecrust into a pie plate before.. also when I make cheesecake I press my graham cracker crust down into it first before filling it… It works very nicely. Either that or roll it out and cut it the size of the bottom of the pan and put that in first and then do it in long strips for the sides. i’m not a vegan, but I thought your crust looked delicious, as well as the fillings. Very healthy and intriguing❣️
