That is the way I clean my Turkey I am glad to see another person using lemon. I leave with lemon a entire day . I don’t like the smell , I do the same chicken, pork . Then the next day I marinate . Everything onion. Bell papers LOTS OF GARLIC , oregano , tomillo , rosemary , Lee & Perry sauce , mustard a LOT ever kind onions purple , yellow , blend everything in a beer. Adobo , Italian herbs , any herbs you have , . After a day or two marinated . Put in the oven . Turkey is white meat is a big bird , 2 days marinated is perfect . It would have a nice flavor . Lee & Perry sauce IS A MOST , adobo , italian herbs . Go crazy with the garlic

Cooking it correctly will kill any bacteria. Water does not kill bacteria and neither does salt. Salt can actually protect salmonella so use this information as you will

Yes, salt can be effective in preventing salmonella growth in foods, but it depends on the concentration of salt and the temperature:

      High salt concentrations
Salt concentrations above 10% can prevent salmonella growth during soaking.

      Low salt concentrations
Low levels of salt can actually stimulate salmonella growth, especially at low temperatures.

      Temperature
The optimal salt concentration for protecting against salmonella varies depending on the temperature. For example, at 70°C, salmonella in 1% and 3% salt concentrations are more heat susceptible than those in 0% and 5% salt concentrations.

Salt works by dehydrating cells, which prevents pathogens from growing. This process is called salting and can be used to preserve foods through drying, brining, or fermenting.

I would add. To clean the bird you take out the two pieces of the little glands, they call them little breasts, then you take off the nail, called tips, afterwards you take off the little glands red on each side of the hip. Make sure you let it sit in water salt, lemon and vinegar. That's how I start mine. Ty for the tips let it sit for a couple of hours or longer. Then the secret is the hot water you throw it in your bird after the brine.

According to a study by the food safety experts at the USDA, washing or rinsing raw turkey can put you at risk of foodborne illness. There's only one time you should wash a raw turkey, and that is after brining. Otherwise, do not wash a turkey before cooking.
