I watched this video 7 yrs ago. This is how I cook the turkey. When Thanksgiving rolls around I am always asked to cook the turkey. Everyone really seems to enjoy it, so far No complaints. I followed him step by step. Just watch your cooking time. Every oven is different and depending on the turkey cooking times can vary. Happy Turkey Day
I like to to butter my Turkey in the inside between the skin and the meet, so the butter can moist the meet all the way thru the cooking process. I also add Garlic, Lemon and Parsley and the zest of a lemon to the butter to elevate the flavor. You can also rub the Turkey skin with any of your favorite rub and then add olive oil if you want too. The olive oil will help crispy the skin.
I used this recipe last year and everyone loved the turkey. I would 100% recommend this, and that's how I'm cooking turkey tomorrow for thanksgiving. I don't even know how to cook and I don't like to, so I'm happy I found this simple recipe last year.

I did everything he told me to do.. I'm a marine combat veteran I live alone with my canine who served with me in combat.. but I forgot to turn the stove on for 4 hours.. but we ate it anyway. Talk about relaxed turkey, We feel kind of dizzy.. but it was delicious😀🇺🇸. Semper fidelis
I wanted to know about the wine you use is there a certain brand you prefer ? Also how much to use. I was told at the last minute that I was cooking. Around here the stores do NOT sell beer or wine on Sundays. The only thing I could find was a vinagar cooking wine. Still it turned out Good.

Experts here complaining about he didn't add like 5 pounds of butter and seasonings. Well, some people like to eat healthy?? When your looking down a camera and trying to say everything just right And do everything just right its easy to over look something you normally do. I have worked in many Restraunts and if you knew what went on in the back. You would spend more time at home cooking your own meals.
Cook at 400 only if you want burnt, dry turkey on the outside and raw, bloody turkey on the inside. Most turkey recipes call for 350 degrees. I double checked that in this video at 4:17 you can see his oven is set to 350 as he's taking it out as well as at 4:00 when he's putting it in.
What I do is to raise the cooking rack from the roasting pan by using two oven proof ceramic plates and place it under the metal rack. This will allow the turkey from getting in contact with its own liquid.
Something is not adding up right here. Has anybody noticed the cooking time chart is wrong, see video at: 4:08 and pause it, look at the unstuffed section with 14-18 Lbs turkey it has cooking at 2.5 to 3 hours. It should be 3.5 to 4 hours and next slot should be 4 to 4.5 hours at 18-20 Lbs turkey. Just saying. I wouldn't go by these figures you'll end up with under cooked turkey, raw in center. Safety first.
is the wine alcoholic? and also I notice when he takes it out of the oven the stuff he put inside isnt there and it is no longer tied... are you supposed to untie and take the stuff out at some point?
Brown the bird, right side up for 30 minutes at 450 DF. THEN flip the bird and roast it that way for the remainder of the cook. This also solves the problem of getting the leg and breast sections equally done.
My thoughts and concerns exactly regarding dark vs light meat getting equally done.. Your idea sounds really good.. I will try this.. Thank You! Also- I was thinking about 15 minutes per pound at 325 after the 30 minute high temp sear.. Any thoughts??
If you want crispy skin, then use a 50/50 mix of Kosher Salt and Baking Powder on the skin. Put it in the fridge, to sit overnight. Prepare to be amazed at the end result!
I just flipped my bird on my half time, question , what if i started with wrong side, does it matter? I have a 20 lb turkey and so far cooking now on other half, I have 2.5 hours left. should I flip it again after my 2.5 hours? I know when ready to cut will flip anyway.....please let me know! I have family visiting from out of town, we are celebrating thanksgiving early today. Thank you!
If you take the turkey to 165 IN THE OVEN, carry over cooking will increase it to anywhere from 170 to 175 internal. Get the turkey OUT of the oven at 155-160, so you don't wind up with a dry-ass turkey!
@kl4y kl4y Yes, cooking kills bacteria, as long as internal temperatures are maintained. Cooking does not destroy the heat stable toxins produced by many kinds of bacteria while they grow. This is one of the concerns with proper cooking and avoiding cross-contamination. If you missed the cross contamination I suggest you watch again. Any handwashing? He handled raw turkey externally and internally then the bowls, brush, pepper grinder etc. All those surfaces are contaminated. Good temps though.
So, I'm wondering why kosher salt. What is wrong with iodized salt, better for your thyroid. Another question, what do the food rules say about turkey.Koser or other wise.

There are many ways to get to a juicy bird. My sister just puts more water in the pan with tons of onions and not an ounce of butter anywhere and her turkeys are always super moist. :)
If you cut your hand while preparing the food, wash your hands (even the cut) thoroughly and apply a sterile bandage (use topical antibiotic if you wish). If you are preparing food with the bandage on, I'd recommend a glove to prevent 1) Contaminating the food, and 2) infecting the cut. Obviously don't use any veggies that may have been contaminated by blood, that's just gross! The turkey should be okay, it's dead anyway and will be cooked to proper temp. Keep the area as clean as possible.
Okay for example he touches the bird with his left hand at 1:36. We cut to another spot of him touching the stuffing. I don't have time to watch the entire clip but if you have some specific times please let me know.

Why do some people cover their turkeys with foil or lids? Is it better not to cover the tutkey? So you just cover it after you take it out? And, is it better to leave out potatoes at the bottom?

I bake my 20lbs turkey and I mixed butter and herbs put under the turkey skin bake 4hrs 40min.came out moist and flavorfull.

All it does is screw up a logical cook time.

Grab the bird by the neck hole and a-hole and then very carefully turn it over!

The time chart actually has a 12-14 # bird cook longer than a larger bird
