In the games, Deviljhos do not eat their own tails. What you CAN do is make it LOOK like its eating its own tail. Simply cut its tail then hide meat (raw or trap meats) inside the tail model. Once it notices the meat it will go for it and eat the meat. By a visual mishap, it's "eating" its own tail. Keep in mind this can really be done only in the older generation of games (Gen Ult or earlier). Deviljho in world ignores meats unless starving.
Deviljho doesn't actually eat his own tail however at certain times in a hunt he will attack anyone who is trying to carve at his tail with attack that makes it look like he is eating it
Monster Hunter official lore says that Jho eats its own tail. Obviously it’s not a mechanic they would put in the game because how annoying would it be if as soon as you cut off the tail, he just ate it so you get no carves.

Our only hint to this occurs with the deviant Bloodbath Diablos, of which lore wise his tail did get cut, and has regrew since then with 1 side of his club tail being bigger than the other.
