    Many years ago, when I was quite a bit younger, we, too, had a very large garden, we had green beans, potatoes, conch peas, purple hull peas, cucumbers, the tomatoes got nematodes, so we bought tomatoes from a tomato farm in Sumter County, just South of us. WE picked our own and paid a per-bushel price and I canned those tomatoes -- either as stewed tomatoes, where I would dip them in scalding water, then dip them in ice water to cool them and make the skin split. Then, we peeled them using our fingers, got them peeled and cut them up in about 1 inch squares, brought them to boiling, removed the heat, and ladelled the tomatoes and onions and celery (for stewed tomatoes) ladelled them into quart jars with a teaspoon of salt and a teaspoon of sugar, leaving 1//2" head space, wiped the rim of the jar clean, put a heated, clean lid), screwed the lids snug and they were treated in the pressure cooker for 10 minutes at 5 pounds pressure. As each cooker of tomatoes were done and the canner was open, I would use my jar lifter to pick up the jars, one by one, and sit them on a clean, dry towel to dry in a place where they would sit to cool. For tomato juice, we would clean our tomatoes, cutting off any bad spots which might be in existence, and use this machine I have which removes any core or the seeds, leaving the liquid. Then, I'd cook it down, stirring it constantly, until it became thicker --the consistency you'd want your tomato juice to be when drinking it. I used several pickle recipes, and only one really turned out good. They were a bread 'n butter pickle, but this recipe required that the cucumbers be soaked in large containers for several days in a solution of water and pickling alum and other ingredients. After those few days, you thoroughly rinse the cucumbers and pack them into jars covering them with heated vinegar, with dissolved sugar, salt and other spices. These were the absolute best bread'n butter pickles I've ever made. They were deliciously crisp. I'd have to look up the recipe I've got for those pickles. I made oodles of blackberry jam (without the seeds), raspberry jam (also without seeds) and we made a lot of blueberry jam. It's amazing what you can accomplish when you try. I know you have a LOT of very hard work ahead of you on that. I wish I could come to your Market Store to shop, but we live in North Central Florida -- I think that's too far for a shopping trip! God bless you both and your families, too. This is such a hard work season --Since I can barely get a meal together anymore, I'm glad I don't have the headache of all the gardening and canning and freezing stuff like we did for so many years. Love the food, but the work does take it's toll!

    As I always say, I have learned so much from your videos, I never knew cows/calves could survive harsh winters out in the open. I come from Lebanon and when I watch your videos it reminds me of my grandparents' raising handful of cows in the village. Thank you very much for looking after the cows and calves.

    Dang, I now realize I am more in love with the idea of ranching than actually doing it. Living vicariously is a beautiful thing. Checking livestock throughout a cold miserable night is not my idea of fun. Thanks for sharing your experiences. I am guessing you need at least 6-8 hours of sleep that was well earned.

    Those late storms sure do bring challenges to the entire farm. Let's hope for timely rain, record hay yields and much success with the farm store, ranch stay cation and future home delivery marketing arm. Might work to have pickup orders at the farmers market prepaid with online orders. Back to normal warm weather and spring.

    Some difference compared to here in Ireland.We had our first charolais calves today which was sunny and 16oC with great grass growth in the last week.keep up the great work showing how hard farmers work to put food on the tables around the world

    Such well made videos. Appreciated the part of the highway and how the snow left some truckers in precarious circumstances since virtually every thing in our lives relied at some point on a trucker. And like you a rancher, truckers work odd and long hours. Here in the California Sierra it looks like a few ski areas will still be open come July thanks to the past week storms that have dumped more snow.

    Weatherman Says we have another 2weeks of this weather cycle before it looks like it could break. Here in central Minnesota we are looking at another 3+ inches of rain on top of the 3 inches we already have the last 5 days. Some how we will make it through this, Human and Animals have survived through worse!

    Rain and snow equals what we call elephant snot and is the worst to deal with. Tricky to drive on and a bugger to shovel due to its weight. Glad I don't have to deal with it anymore. You have my sympathies.

    The mother-cows with its calves always look for a dry place in time before the snowstorm that offers enough wind-shelter. Because the suckler cows feel already hours before that a snowstorm comes. The calves are actually always in the lee of the mother cows when a snow storm breaks loose...
    When small forests of aspen and willow trees grow in the prairie, the suckler cows would seek shelter there from the blizzard.

    My heart just drops when storms like this hit and there's new moms and babies. Can see all your doing to try and keep them fed and as dry as possible. When will this winter end! Thanks for sharing all that you do, it makes the struggle seem easier when you're not alone. Oh, and trust you can get a few hours of uninterrupted rest! :)

    Back to normal? Is there such a thing for you? Several comments to add, at least we have better weather forecasting so you know what is coming. Hopefully the moisture helps with your hay crop. It would be nice. And have you thought about planting some wind breaks? I felt for the cattle in that wind. Thanks for the great videos.

    Here on the Gulf Coast in freezing weather the rain is more dangerous than the snow because the rain becomes solid sheets of ice on the roads nearly instantly whereas the snow will get knocked out of the way by the cars and there will be a visible path that is (mostly) ice free. Of course, we don't get NEAR the snow y'all do and that could be a big difference. Does it work the same there?

    It didn't look like there were any calving casualties. I hope that was the case. Driving in wet freezing temps is always dicey, chains or not. The black ice can be so dangerous. Now that you are done checking cows all night, time to sleep... I mean live stream. Lol
