So from my understanding is that I would essentially want to have my knee touching the ground when the hammer is at the high point and standing up when the hammer is at the low point so that I am going against the hammer or just stay low at all times?
just stay down until release which you should stand tall

Stepping towards the hammer......???
Your third thought of stepping straight off to 90 degrees, is the discus feeling, not a good teaching point for Hammer training. Your demonstration movements, for any style you choose, shows too much weight on your left. I can see you have great knowledge of Hammer throwing, but this teaching of having that much weight on your left leg is counter productive. As is your stepping way too far forward at 180. I would be interested is seeing you critique a 80 meter throw, because it would not be possible, performing those 2 technical flaws.
