Count functions are included but not CountIFS. However there is not rule to this as technically it is a count function. I would learn it just uncase. It only takes a couple of minutes to understand it.
i think the timezone will be a bit of an issue. I dont now what you mean by teach us online. I do sometimes meet online with classes to offer support through the teacher but the teacher requests this. If it is a meeting with a group like your class we could arrange a meet and i could help with some of the difficulties the group has. If you are talking about ongoing lessons then that is a different story.
