The thing i like most about your cooking is you never really use to many ingredients. Ive seen a lot of people over the years who forage and then try and mask the flavor of whatever it was they work so hard to find and harvest...i could never see the point in that.
One key thing about keeping the green I have learned as a chef for. Dice or soup like this is cooking it by ice water for a blast chill to help retain the chlorophyll within the sauce. If yoften let warmat room temp the chlorophyll will lose its fresh green and go towards browny
I am going to grow my own organic stinging nettles and look forward to making this bowl of soup in the near future! Thanks for sharing the recipe and for showing us how to cook some of the most nutritious wild greens (weeds, lol) around us. :) 😀

Thanks. Using restraint comes with time. I used to tell my line cooks to take 2 things off a plate or out of a dish before they added something else.

Yes but you could simply freeze wilt them.

Blast chilling the soup helps retain the green colour otherwise will go brown
At what point do the nettles stop to sting? After they are picked or cooked?
