Sri Lankan Lagoon Crab Red curry/ Sri Lankan Mud Crab curry. The best delicacy from Sri Lanka.

  • The Sri Lankan Mud crab also known as the lagoon crab is the no 1 or easily the most famous delicacy from the island. The Sri lankan Mud crab is sort after by many foodies, chefs and restaurateurs alike. It is also one of the no 1 delicacies shipped to other nearby countries' for the famous chilli crab dish.
    It wasnt always like that, as a child i remember my grand mother buying this off people who came from door to door with hand woven baskets filled with these mud crabs, at that time long ago this was the best buy specially for large families because of the low price. Because in comparison to the sea crab the mud crab in Sri lanka was very cheap and not consumed by many. Yes there was a time that the mud crab was severely underrated and considered a poor mans food. I would like to think that the Mud crab is looking at the once over glorified sea crab and saying; Look at me now!.
    It does however have a very specific and unique taste and has a stronger sweeter flavor as opposed to the sea crab. If cooked properly and given the due respect, this is one of the best shellfish/ crustaceans you will ever have.
    Sri lanka has many lagoons and out of which only certain districts farm these as a business and you would find all the lagoons with these creatures roaming freely. Its mainly due to the very difficult and hard work you have to put into nesting and growing them into a sizable feast.
    In my travels around Sri Lanka i realised that in each district that you find these lagoon crabs are cooked it in different ways. Although the base is fundamentally a curry, the cooking method and taste is quite different.
    I have prepared a red curry using JAFFNA curry powder and this is one of the most common recipes in Sri lanka to cook crabs in general, although the Jaffna crab curry is different recipe altogether. There are various methods and cooking styles in Sri lanka alone which brings out the fantastic flavour of the lagoon crab and i will be sharing all these various recipes' on my channel THE MINORITY TASTE.
    INGREDIENTS' for the (1.2 kg) Mud crab Red curry:
    1 big bombay onion chopped
    1 big tomato chopped.
    1 whole garlic chopped
    3 inch ginger root chopped.
    Curry leaves.
    Pandan leaves.
    6 table spoons of JAFFNA curry powder.
    2 cups of thick coconut milk.
    1 1/2 cup of water.
    A little oil to stirfry
    salt to taste.
    juice of one whole lime.
    Moringa leaves.

    I love how our lagoons in Sri Lanka impart varying subtle flavours into our crabs, based on the surrounding geology and forna. Its sad, but I'm not surprised we import so much of it to other countries, given the unrivalled flavour of some of them. My biggest concern however, is that sea level rise may see us lose the precious ingredient forever. I hope our fisheries are looking into sustainable farming methods for future generations to enjoy them also.

    OMG looks so delicious, as we are in lock down I can’t go to our markets to buy live mud crab. We are lucky as the Darwin mud crabs are fantastic so I hope we are let loose by June which is when the crabs come into season here.

      THE MINORITY TASTE with Ruzaina Hadgie I will but as we are under a state of emergency here in Melbourne I will have to wait as the market is too far away from home. Your curry looks mouth watering and gave me cravings ha ha. I make a mix of roasted coconut, rice, cumin and fennel seeds which I grind into a powder and sprinkle it a few minutes before I take the curry off the heat as it thickens the gravy and gives it a nice flavour. I am going back to a local SL shop on Wednesday as they have Jaffna curry powder, I saw it but have never used it before so I didn’t bother purchasing it.
      Please keep posting authentic recipes as I am learning so much through you. I have been talking to you for a while as you where very interested in learning European Burgher recipes, did you manage to purchase a Ceylon Daily News Cookbook as yet? Let me know if you want any specific recipes as I will be happy to send you any recipes you like. I will need another way of contacting you as I can’t post anything here on your youtube

But do give the Jaffna curry powder a try.. out of all the curry powder recipes from Sri Lanka.. Jaffna curry powder is the most popular and famous world over for a reason.     I tried making it without the Jafna curry powder. I used madras and toasted it gently in a pan before adding. It achieved a similar taste.
    Have you ever tried making any crab dish using a little gorakka, for a extra tangy taste? I am considering doing that next time.

      Great, authentic in taste, just like I've experienced in Tamil restaurants back home. Mine looked slightly different, as I added two Kashmiri chilli's, simply for a deep red colour, which I personally prefer. It creates a stunning contrast of colour when you sprinkle any fresh leaves on top to serve.
      I believe Sri Lankan food would be far more popular around the world today, if we applied more consideration to presentation.
      A crowd pleasing celebratory dish, one of Sri Lanka's finest. I will be cooking it for friends once this lockdown is, over!!!.

      Haha.. only if you knew that it takes alot for mud crab to soak in the flavour.. its a solid flesh that way.. so its not too much curry powder at all.. you can dip that sweet flesh into the thick curry sauce... Yummmmmmmmmmmmmmmmmmmmm😄
