- I call this Cebu Masi because this is version of mochi is very popular in Cebu. The original masi was made with purple glutinous rice which is not so easy to find now. To make it easy for you to make at home, I use glutinous rice flour. Making the rice dough is easy but filling it with the peanut-sugar filling is the challenge. It is indeed challenging because the rice dough is sticky but it surely is not impossible to make. Give it a try now.
Chef's Notes:
1. In rolling or flattening the rice dough to fill, you can put oil on your hands and rolling pin. You can also roll them between 2 sheets of plastic.
2. You can fill the dough before you cook them BUT I find it easier to fill them after cooking.

Hello Chef Rose!! So glad to know that you have a TH-cam channel. I remember dining at your small resto in front of USC Boys High back in the early 90s where I studied. It was one of our go to resto during lunch break and late snacks after dismissal. I miss the Cebuano delicacies, especially masi and masareal, after leaving Cebu in the early 2000s. I don't go home to Cebu that often so having this tutorial and recipe of Masi available in your channel will help me make one for myself and not get too homesick. Thank you for this ❤🥰

Yes. I know that it is easier to put in the filling while the rice dough is not yet cooked BUT this is Cebu Masi version. This is how it is traditionally made here. We cook the rice dough first before filling it. I have another tutorial where I cooked the rice dough first before I filled it. This is the chinese version. You can watch the video in my FB page.
