This creamy rice pudding recipe only has a 20 minute prep time, allowing you to create a crowd-pleasing dessert in a limited amount of time. Start out by cooking the rice yourself for truly homemade rice pudding. Pour 1 cup of water into a medium saucepan over medium heat and add 3/4 cup of milk and 1/4 teaspoon of salt. Once the liquid is almost boiling, add 1/2 cup of Arborio or long-grain rice and 1 teaspoon of butter. For a creamier baked rice pudding, go for Arborio rice, which has a higher starch content. Stir the mixture and bring to a boil, then reduce the heat to very low and cover the pan. Simmer the easy rice pudding until it's thick and the liquid has almost evaporated, which should take between 25 to 30 minutes. Keep an eye on the rice toward the end of the cooking time so it doesn't burn, stirring it every five minutes. While the rice is finishing up, pour 1 cup of half and half into a small saucepan over medium heat. The vanilla flavoring is what's really going to give this rice pudding recipe a rich taste! Take half of a vanilla bean and slice it lengthwise, using a paring knife to scrape out the seeds. Add the seeds to the cream and heat it until it's just boiling. You can use vanilla extract, but this gets added later. Whisk together two egg yolks and 1/3 cup of sugar in a bowl, then gradually whisk in the heated half and half. Return this mixture back to the saucepan and stir constantly until it thickens. Pour this sauce over the cooked rice and stir together. This is where you would add 1 teaspoon of vanilla extract if you so choose. What's great about this rice pudding with cooked rice is you have the option to serve it warm or chill it for several hours and serve cold. Serve up the rice pudding in individual dishes and allow everyone to dress it up however they choose, whether that be by sprinkling it with cinnamon or topping it with fresh fruit!

    This is BY FAR "THE BEST" Rice Pudding recipe on the internet!!
    *As a treat, I also add a "cap full" of dark rum to the custard, nice at Christmas time.
    *Stir in 1 tsp of cinnamon to taste.
    *You can also add 4-5 whole cloves while bringing the custard to a boil...
    (milk/cream/sugar mixture).

    I followed this recipe but used honey from my beehives instead of sugar. Fantastic! Just use about 1/4 cup of raw local honey.

    Tried this today. Really easy, but I'd increase the milk needed to cook the Arborio rice. It can dry out quickly. Otherwise that sauce is amazing.

      I think it dries out because they add salt, I wouldn’t add salt before the rice is cooked.

      Extract is easier to get.
      If you want vanilla beans just order it. Highly recommend bulk buying nuts while you're at it, it saves a lot of cash

      It's worth it!!! Give yourself an hour.
      Read above...my other comment. If you like rice pudding, this is an absolutely UNREAL recipe. You can use a good vanilla extract too.

    This is the winner, HONEY DRIZZLE, & redi-whip near to spray whipped cream on top. Might try some rasins and nutmeg too, i did very tiny amounts. I would only use arborio rice. Study greek rice pudding recipes too.

    I love rice porridge and tried to make this with whipping cream. With eggs, it indeed needs almost this much sugar to taste sweet. I want to eat minimal amount of sugar, and tried 1/3 of a cup to 1 cup of rice, and it was barely enough. Do we not use the egg whites at all? I beat them and added to the porridge after it had cooled a bit. The result was a very airy mix that stayed fluffy in the fridge. But it lacked sweetness.
    For an everyday meal, I would simplify this: slowly cook the rice in milk and sugar solution (less sugar), then add a decent amount of butter and vanilla, all in the same pot. I will always add vanilla to rice, semolina and oatmeal from now on.

    What temp is simmer? What temp is very low heat? Why no recipe in header pull down? Does not sound like much Sugar? Edit: perfect sugar (maybe tsp less of sugar), i made it. Its a good recipe.

      That's what I always use.
      I also put raisens, strawberries and cinnamon, let it chill for a couple of hours and it tastes AWESOME!!! 😁

      First, find an udderless cow.....
      Soymilk or anything similar as a substitute should be fine, but just know that finding the udder on a soybean will take time.

    Leave it run’ee looking, if not it will be all stiff after frige. Fridge makes it absorb all the custard and ruins it.

      @@dm.md9756 that is literally what starch does my man. It thickens stuff. Of course I wash my rice before cooking most times, but this recipe doesn't need you to wash it. The starch thickens the pudding, making it more enjoyable. Please don't be racist my dude.
