Looks like you are having better fortune than I. my channel had multiple videos with a brand new Uberti ‘61 that has reliability problems as well as a loose barrel and wedge. They finally replaced the gun after two repair trips. The replacement gun solved the loose barrel but the gun kept misfiring.
As unlikely as it may sound, I am now of the suspicion occurring is a two different CCI 11 cap tins purchased two different places are both defective. With two guns having the same issue.
Otherwise it is a great gun and a good shooter. Action feels good.

My Pietta 1851 navy says to use number 10 percussion caps. Is that gun different or is there a way to make number 11 caps work?

I don’t think the two replica brands are identical; nor are the different brands of caps even with the same numbers…
