My friend and I garden together and then we can everything up together. We split the cost, the work, and the end products. We plan out what we are planting each year based upon what we plan to can. Last year we canned up a bunch of pasta sauce and green beans, so this year we didn't plant green beans and planted different tomatoes to do salsa, diced tomatoes, stewed tomatoes, and tomato sauce. We planted peas in place of green beans this year.
It took a bit to figure out what and when to plant what, but we plant the herbs and everything we need for the recipes.
You are blessed to have a friend to share on gardening and canning.😊

Oh I would love to have your recipe for stewed tomatoes! I want to can my own and not buy them in cans @ the store.
What a wonderful thing to do -- plant and tend a garden with a friend and then put up the harvest together! My husband and I plant a garden every year and work all summer weeding and watching it grow. Harvesting and preserving it for the winter is a lot of work but so worth it! No greater reward and satisfaction than to know where your food comes from!

I love the idea about freezing the squash slices and frying them straight from frozen. I really want to try that!
I have had SO many conversations lately with ladies who want to start canning and preserving food. I send them here, suggest they start with waterbath...pickles or jam and/or jelly....but most importantly JUST GET STARTED... the rest will come! 😊

My favorites you forgot. Grate a zucchini into shreds. Add egg, small dices onion and seasonings. Roll together with crab, shrimp, or fish bits. Shape into round patties and dip in light flour. Fry up medium high heat. Drain on paper towels. To die for!

I haven’t “put up “ squash for YEARS but I think I’ll do some this year. My 99 year old Mom died, end of February so I’ve been in a bad way emotionally. Thank you, Miss Lori & Mr. Brown. Enjoy your retirement Summer ❤️❤️

I’m 73 years old and have enjoyed my retirement so much. I love to can and freeze and bake and enjoy watching you do the same. I have wanted chickens for years and my husband built me the cutest chicken house last year and I have 7 chickens that keep us and family well supplied with eggs. We have seven beautiful grandchildren that we love spending time with and live in northeast central Arkansas and we fish and camp and my husband hunts and keep us stocked on wild game. Thanks for spending the time to visit and teach me some things I didn’t know! Happy Retirement!

Hi Miss Lori. I just wanted to share with you two other ways that I discovered to use my zucchini and yellow squash: 1) when too large for most things, I peel, de-seed, and cube it and use it in my salsa recipes (it takes on the flavor of the salsa perfectly and stretches the batches and no one knows unless you tell them!); and 2) when seedy but still tender, I chunk it up and add it to my leftover tomato juice when I’m canning tomatoes. This works great because it uses the juice for a nice soup base, and with some Italian seasoning, can be added to spaghetti or stir fry dishes or just about anything else. Btw, happy retirement! 🎉

Ms Lori, I will soon be 80 years old so I have been around a while. When I was a little girl, my Granny made Grape Leaf Pickles. She made them in a crock. She used whole cucumbers and added grape leaves and green grapes that she would squeeze till they popped. She didn't use pickling spice or dill, just salt. She used a good bit of salt. She would put a saucer on top of the cucumbers and a rock that she had to hold everything down. Back then there was no such thing as weights. You would get a nice rock, wash it up and use it. Those were the best pickles I ever had. I just wonder if you have ever heard of that kind of pickles.
Isn't amazing how fast a zucchini can grow? Your chicks will love those seeds.

Well i enjoyed watching this video. We are so far behind in everything this summer. Here it is the middle of June and my son and i just got our tomatoes planted. Hope to get the peppers in tomorrow. And maybe some beans. We've been busy trying to get our front porch scraped and painted. Finally got primer and paint on the railing and floor. Just have te steps and skirting to finish. Then tvhis late afternoon the dump truck full of gravel we ordered to put between our 2 sheds arived. We worked for a couple of hours shoveling before a thunderstorm rolled in. Did i mention I'm 71, son is 25. Both have shoulders that are messed up 😊. His left and my right. My husband 81 isn't able to do a lot. Oh. Well. GOD is good. He gives us the strength to carry on. Praise His Holy Name

Like the zucchini pucks! I peel, cut out the seeds, and cube zucchini in gallons bags and freeze. I thaw and whirl in the blender. Ends up the same consistency as pasta sauce. We use as a second sauce for lasagna. It is different but in a good way!!! I will try blanching this year.
Lori, I so enjoy your videos. So down to earth and sharing great information. I'm going to try your recipe for fried squash. I don't garden, when we retired we downsized to a mobile home park. It's a beautiful area, but can't do much as for gardening. I do have a small herb garden in pots. I've got you by about 10 years. Still cook and clean by myself. I'm a scratch cook, and always clean up as I go. I love my vacuum packer. I do many veggies when on sale. Plus, I still seem to cook for family, so do freezer meals in the packer too. Anything I can freeze in a puck-- garlic, ginger, zucchini, etc. I LOVE! Yellow squash is one of my favorite veggies, and I'm going to freeze some to fry...I'm glad you mentioned you done it before without a sealer because I don't have one 😂 I'm glad we got to visit--tell Mr. Brown hello. That's what I grew up with (except boiled in the earlier days). We always grew squash in our back yard and mom prepared it very simply. She liked the patty pan white squash better, but I thought the yellow were just as good or better.

My grandmother always reused her bread bags, cool whip containers, you name it. She was incredibly frugal and resourceful.
I just brought in a whole basket of squash from the garden this morning. I think freezing it up for frying is just what I'll do today.

We are squash crazy in our house. Mostly the usual like butternut which I cannot seem to make enough of according to our boys. Zukes, crookneck & there are some new ones (Pennsylvania Dutch Pumpkin & Canadian Crookneck) I plan to try at some point. You both take care.

I'm looking at your yellow squash and longing for a treat my sister brought to me during a visit last month. She's in south Louisiana and I'm up in northwest Missouri. She sweet-pickled yellow squash, with thin-sliced onion and jalapenos. You talk about GOOD! I wish I had another jar to enjoy. We had them alongside hotdogs a couple times. I topped my chicken salad sandwich with some, and then added what was left to a pasta salad to kick it up a little. We grew up eating pickled mirliton (chayote / vegetable pear), but I'd never had pickled yellow squash. Try it sometime! Really enjoy this video. Happy Retirement!!!

Ms Lorry, I have a question. I remember my wife frying up a mixture of vegetables that I absolutely loved but have no idea how to season it. In a big skillet she would cut up potatoes, onions,. and add breaded squash and breaded okra. I know she got 3-4 bottles of her seasonings to add but I don't know what they were. I do remember minimal salt but quite a bit of black pepper. If you have ever fried up a mixture like this, please do it and tell me what you put in it so that I can try to make it again. I also remember she didn't put everything in at once but according to how fast they fried. She used a big spoon of shortening to begin the frying, but after, just add a little water to the skillet to more or less steam them. It was not overly greasy at all, and the vegetables taste shined. It was a delicious one pot meal that was good for several meals. It heated up as good as the fresh. Thanks.

Hi Miss Lori! You are the first person I have seen make salt pickles other than my grandmother. These are my favorite pickles and I have been trying to get the recipe for years now. No one seems to have heard of them. I now have your recipe and plan on making my own salt pickles. All though, I don't remember them being fermented. My grandmother canned them. But she called them salt pickles. But I am going to try this recipe because I love fermented veggies. I love the fact you are working bare footed as well. My favorite way to cook as well. I rarely wear shoes in or out of the house. Blessings to you all!
