If a dish has to become "vegan". It probably shouldn't exist in the way Jamie Olive oil is making. As for the Vegan fish sauce thing. It's probably made from both seaweed and mushrooms since those are basically vegan by itself. And you can get pretty good flavors from those 2 ingredients.
I just found this channel and you guys make me smile. 😊 Someone posted about vegan fish sauce and they are correct. In fact it's made from a condensed broth if seaweed, mushrooms. They season the flavors with Soy Sauce (Tamari) or gluten free liquid aminos. I saw that video and that is not Pad Thai. 😂 P.S. I hate the way he uses chopsticks. 😂
Does anyone else think that Jamie Oliver is just trolling Uncle Roger at this point? It would explain the fever dreams disguised as cooking, that we've been seeing.
Not just Asian dishes, he got Italians and Spanish people all worked up too. Just gotta do a little bit of homework and he won't incur the ire of half the planet. But who knows if he's doing It on purpose or not.

I remember when my now grown-up children where little. What they "blessed" us with regarding vomit and shit was 10 times better looking than Jamie Oliver's sauce.
I think the issue is that Jamie's aim is not to get people cooking traditional foods exactly, it's more to change the cooking habits of the average person/family... Get them away from processed meats, ready meals, fast food etc., while trying to encourage more healthy options... He's not trying for authenticity, maybe not even flavour that much.... He's trying to get people eating more vegetables and such... He's focusing on cheats to make things quicker and more basic, featuring more common (for the UK mostly at least), household, ingredients and utensils (or at least stuff that's easy to find in the average supermarket maybe... Maybe stuff that can be used for many things)... Also, trying to appeal to the tastes of the average person in the UK maybe... Something like that... He probably vaguely bases his ideas on popular or well known dishes to give them more appeal/recognition, but chooses to do his own versions... Something like that... He's not your typical chef, doing typical chef things... This doesn't make what he's doing right or necessarily good, but you know? Maybe it gives you more context of some of the weird choices... I don't know ^_^;;

I mean it really depends on what you want, if you truly want an asian dish, you can forget him. however if you are maybe like my father who doesnt want to experiment with food doesnt like to taste other food. something like that might be for him or for people who might not 100% asian food but a mix out of asian and western style or so they would enjoy. so it really just depends on what you are looking for. plus his food is also more on the "healthy" side so if your not into it you wouldnt like his food too
I think the problem is that he's bastardizing things in the process of trying to make them healthy. He dosen't educate himself on any asian cuisine and just pick a healthy dish to prepare (there are thousands of healthy asian dishes), he INSISTS on trying to make things healthy that in reality, will never work. It's just the nature of some dishes that they cannot be made healthy and also still be the same dish. It's like trying to health-ify battered and fried fish, you can't. You can make lots of healthy dishes with fish but for example fish and chips, will never be one of them, nor should it be. Just eat other dishes on the regular and have the less healthy stuff more occasionally.
Making things “healthy” is an excuse for Jamie Oliver to make weird and poor choices. Pad thai can be made vegan by substituting fish sauce with vegan fish sauce and shrimp with mushrooms. Choosing to sauté hard tofu instead of frying it is also acceptable. Using lots of sesame oil to cover noodles when the problem was poor technique and then using no oil to for the dish is bizarre. Adding a bunch of herbs that do not go into the dish makes no sense. All Jamie did was create unnecessary steps and unnecessary ingredients.
I don't know if it's arrogance or ignorance of Mr. Oliver at least if you barrow a recipe from other cultures maybe you some respect and justice please don't murder the food recipe it's heart breaking 😢
