      Hey, I scream at the TV on occasion when Rachel Ray is on. A family member watches her show. I try to leave the room during her cooking segment if I happen to be home. The edible flowers is a trademark for her, but it's totally stupid for me, not something I would ever even consider.

    9:38 As a Thai chef raise and born in Thailand
    1. Put oil in the wok then put chopped garlic in
    2. Put any protein you want, Thai mostly eat Pad Thai with Shrimp or Pork (if you go for Shrimp when it cooked bring it out the heat to rest and put it back when you plate so it not over cook)
    3. Put Rice Noodle(Noodle don't need to soak in water before put in the wok)in and then add like a 1/2 cup of stock and 1 tbs of vinegar to make noodle soak the water
    4. Put Pad Thai Sauce in (Sauce made from Fish sauce, Tamarind, Palm Sugar) then stirring the sauce to cover noodle then put Dried Shrimp and some seasoning like a little bit of Dried Chili, Sugar in and stir it
    5. Put 1 Egg in
    6. Put Vegetable and Yellow Tofu in then stir it, Chopped Chives and Bean Sprout for Authentic.
    To plate put Dried Chili, Ground Peanuts on the side, some also put Sugar either.
    That's It Authentic Pad Thai 🇹🇭

      Chef Brian Tsao is another good reactor for Uncle Roger videos where you can learn a lot more than the original videos. Him and Chef James Makinson are definitely the two best out there that I’ve seen.

      Thank you. I am Thai. Her cooking is really hard to watch.
      Back then, our family meals comprising of 4-5 dishes to share and eat with rice regardless of time of day.
      The one dish portion per person with all ingredients - protein, carb, veg, was invented to make a quicker lunch time. Noodle dishes seem to be a great idea therefore that prime minister promoted it along side with other dishes like pad krapow over rice etc.

    We don't use garlic nor ginger in Pad Thai, the aromatics critical to this dish are shallots, dried shrimps and pickled radish.
    You also have to stir-fry the noodles with aromatics and tofu or the meat of your choice until fragrant then you can put the sauce in, the sauce will be absorbed into the noodles and will be cooked together.

    I had worked as a part-time job in Thai restaurant many years ago, they usually cooked big batch of sauce containing, palm sugar, tamarind, fish sauce, at bit of water and ketchup. Noodles were soaked overnight (for next day cooking)
    from what I remember is that chef fried minced Chinese pickled radish, dried shrimps, Thai Shallot, striped firm tofu together then added proteins. After that chef added noodle and then sauce, cooked until noodle absorbed all liquid and soft then added eggs. Before turning heat off, chef added bean sprouts and Chinese chives.
    So, Pad-Thai that Rachel cooked is totally off and I guess that noodle will be clumped together and mushy, not appetizing...

    Maybe she knew the dish she made needed a proper burial and that is why the flowers. In honor of the Thai ancestors who are crying when seeing this. Horrific. I am not Thai and if Uncle Roger say she fucked up so she did. I ate Pad Thai before, it was delicious and nothing like what she did here. Makes me want a real Pad Thai as soon as possible. Thank you Chef James for giving your professional view. Great funny video.

    Chef James, I'm glad that you mentioned about palm sugar because that's what they normally use in authentic pad thai. The flavor is totally different from the regular sugar and its milder too. What Rachel made here is a totally different dish. It's more like a chicken vegetable stew with rice noodles. She even added some ingredients that are not supposed to be there. I'm guessing that she didn't get to build that smoky flavor either. Pad thai is normally being cooked in a VERY HOT wok which is why it has that smoky flavor in it.

      I don't know about wok hei but I noticed that the food (especially stir fry dishes) tastes a lot better when they are being cooked in a well seasoned wok.

    I just got back from Thailand and was taught cooking Pad Thai by a local chef like a few days ago. To be honest... Rachel's video made me cry. It literally ignored all the stuff the Thai chef told us and Pad Thai is supposed to be a simple dish...

    I'm not a chef but I'm Thai. And I think that my Mommy makes my favorite Pad Thai, which I considered is the best one for me. But then everyone's Mother is their best cook, right? Anyway, we are not here to talk about my Mom's cooking. We are here to talk about this popular dish that's a representation of my country being destroyed in this video. In all my 50+ years on Earth, I've NEVER had chicken Pad Thai. Prawns, yes. Mince pork with prawns, yes. Minced pork, yes. Seafood, yes. But chicken.... No.
    As to the ingredients used. Like Uncle Roger said, all the greens are the wrong types. No ginger is in it. No soy sauce EVER!!! Eggs are done wrong. Beansprout is cooked wrong. Noodles are definitely done wrong, wrong, wrong!!! And lastly, no edible flowers!!! Ugh!!! Looks pretty but is not for consumption. Be advised that everything on this dish is wrong.... Because its flavor profile is all wrong... 🤢

    1) The pad thai sauce is usually cooked separately, using equal ratio of fish sauce, tamarind (or vinegar if no tamarind - though my grandma who was almost a hundred years old never uses tamarind in her pad thai, maybe some regional variations I guess.) and palm sugar, put them to a boil until large bubble appears, turn off the heat and let it rest. You can do it in a large batch and put it in the fridge for later uses also.
    2) We also use dried shrimps, tofu, pickled radish, garlic chives. Beansprouts are also widely used, though not really a requirement.
    3) The garnishes considered traditional would be raw green onion (using the white to light green part, put them in soda before serving for more crunchiness and a bit less sharpness), raw banana blossoms (washed and soaked in water with lime juice to prevent oxidation), raw beansprouts, dried chilli flakes and crushed peanuts.
    4) The noodle used could be rice noodles, or glass noodles. Glass noodles are much trickier due to how easy they could get soggy. But if done right, the texture and mouthfeel are ways better than your usual rice noodles.

    The worst Pad Thai recipe is more than enough to literally tear you down to pieces. It’s one of Thailand’s beloved dishes and for that to get messed up is just a huge no-no. Your reviews are always appreciated, Chef James. Continue working hard and do what you love doing the most.

      It’s not a big deal lol. Thai people aren’t like Italians with their food; the way people cook pad Thai changes significantly in each region and even each restaurant. Some Pad Thais are sour, some overly sweet and some super spicy. Variation in cooking really isn’t a big deal. Thai people also don’t really eat Pad Thai that often; it’s a very touristy food. Kra Prao and pad see ew are much more popular. Heck, even Tom yum goong, Tom Sap, and yam woon sen is more popular(at least in BKK). I’ve been working here for years and I’ve yet to go out with a Thai person or a Thai company that orders Pad Thai for the table. It’s just not that popular here.

    I showed my friend this, he was truly horrified by this Pad Thai. We both agree that you actually teach us something. Like I had no idea there was palm sugar and cane sugar- I just thought sugar is sugar ( I know, I’m very uneducated) I feel like you will become really famous quickly if you keep this up!

    Something I just realized. Rachel was really lucky when she dumped those noodles in the pot. If that water had hit the fry pan it definitely would have caused some grease to splatter. It probably would have just been a few droplets, but sometimes that's enough! I've been frying doughnuts for a few years now and I've had some hot grease almost hit my eyes a couple of times!

    I always add the wet ingredients last but over the noodles as the steam and liquid helps cook the rice noodles and i usually let those soak in water like uncle Roger says.

    Palm sugar + fish sauce + tamarind (best if from dried one) = pad thai sauce, perhaps adding dried chili for the spicy lovers with ground peanuts and squeeze fresh lime right before eating. Shrimps, hard tofu and eggs are common protein we normally put. Remember the sauce is well balanced with slight sweetness from palm sugar.
    No No ingredients are ginger, chicken, carrots, fresh chili, onions, shallots, celery, basil, mint leaves, garlic and flowers for garnish if you see cooks who put such ingredients into pad thai, just turn to another channels.
    I believe she didn’t eat this dish, it’s only a show in response to the audience requests.

    Wow!!! I am Thai and I never see Pad Thai look as bad as this!!!! Can't image of the taste.
    Normally, we use wok and put oil to heat up the wok then rice noodle with all the paste (I always order more juicy noodle, so may add a little more water in it) put dry shrimp, cut yellow tofu seasoning them with fish sauce dried chilli, temarine sauce and sugar. Restaurant will season it in a seperate cup ready to throw in a wok. stir everything put all aside and add an egg. Stir all ingrediants again. Finish it with beanspout (not too much) we will commonly have fresh beansprout, fresh banan blossom and lime. Yummy!!! I'm gonna order the real thing today!
    For the history of this dish, yeah it come from the thought of our Prime Minister want to have a very Thai manu that's use all ingrediants from Thailand and it should be easy for common people to cook at home.

    Edible flowers as a garnish... bull testicles are edible too, but I wouldn't want either of them on top of my Pad Thai.
    Chef, after finding your reaction videos with Uncle Roger, among my TH-cam suggestions... I can't stop binge-watching your channel! Great stuff and I'm learning a lot. Love your editing and format of the Uncle Roger reaction videos... and you, trying to hide your laughter at the most ludicrous things I've ever seen... like the dumping of an entire package of noodles into the pot or the bean sprouts, had me laughing so hard that my stomach hurt.

    That meal scared me. I did take your advice on Mae Ploy as an alternative to all the prep. WOW, they are good. I bought the red, tom yam, massaman and panang. EDIT: I also tried the Squid variety of fish sauce, it is better.

    Don't forget a third option: the burner might not be level. Friend of mine has a burner that has like a 8% tilt to the rest of the stove top

    Chicken Pad Thai is white people thing. You won't find it anywhere except restaurants in touristy areas cater for westerners. Authentic Pad Thai only has tofu and dried shrimp/fresh shrimp. Old style Pad Thai comes with crispy pork skin also.

    Firstly, why is there no wok? Rachael is a professional chef. I don't have a wok as I am still learning about Asian cooking & the woks I looked at would either break my wrist tossing & then I went elsewhere & there were soo many woks - I couldn't make a decision so I walked out but why so many bean sprouts & chicken & why chicken breast period = SMH?

      Rachel Ray has no cooking qualifications or professional cooking qualifications of any kind, her pre television career was basically retail and buying. Somehow she managed to stumble her way into being a tv cook. For that reason I think she deserves a bit more slack than say Jamie Oliver, but I still don't see what the appeal is in watching her, and honestly ignorant people butchering the cuisine of other cultures has never been appealing to me.

    I really want James to cook with roger lol, I bet cooking with James in general would be a treat, cooking is a passion of mine and seeing masters of the craft is such a privilege. James straight dying at the bean sprouts sent me, he’s so incredibly concerned with being conscientious and understanding and he still couldn’t keep his composure lmao.
