I think a Johnson bar is a US term for a metal lever with a catch handle, whether it's used for a bus handbrake or a steam loco reverser or anything. So the S060 uses a Johnson bar to control the cutoff / reverser?
I'm really interested in the strategy for getting out of the harbor headed for food factory. I'm only hauling a 600 ton load but I can't seem to make it up more than halfway up the big hill before I completely stall and can't make any progress.
Likely to be Build 93 since that’s when the Simulator update was pushed. Locomotive got a few more updates in two other builds since then that fixed some of its issues and re-adjusted its fuel consumption.

In 060 it takes 3 scoops of coal from it's own supply, but a single scoop from the 282's tender supply...

Correct, while the 2-8-2 uses a kind of screw reverse
I don’t know why they don’t use real locos in this game. It’s my only complaint.
They don't have the licencing rights for that.

not sure but it was filmed within the first 2 weeks of the simulator updates release
