There are many different ways to braid challah, I've actually never seen one like this where it's one stacked on the other! Usually I do a 4 strand braid but ive seen ones that are only 3 :)

Challah is a 6 braid not two loaves together. What you showed there is some hack i guess.

The bread can't be fresh, you have to let it go stale. That's the reason they invented French toast, so you could make use of your hard, stale bread
