HOW TO MAKE TAMALES DE RAJAS CON QUESO

  • Hope you guys enjoy these delicious tamales de rajas con queso with that special green sauce. Perfect for all these holidays coming up :)
    For vegan please see list below.
    Maseca corn masa flour 1 bag
    1/2 cup of vegetable shortening or your preference
    1 tablespoon of baking powder
    Pinch of salt
    Water or vegetable broth to knead add little by little until you get a nice smooth easy to spread masa
    Vegan cheese of your choice
    For green sauce substitute chicken bouillon for vegetable bouillon or salt to taste. Remember make it your way by substituting and adjusting any ingredients to your needs.

    INGREDIENTS: (Made 3 dozens of tamales)
    12 oz bag of corn husk
    6lbs. of masa preparada para tamales
    32 oz of mozzarella cheese or cheese of choice
    6-8 jalapeño chiles
    1 tbsp of baking powder
    SALSA VERDE:
    1lbs of green tomatillos
    2-4 jalapeños (depends how spicy)
    2 chile pasilla pepper
    2 garlic cloves
    1 piece of onion
    1/2 bunch of cilantro
    1 tsp of ground cumin
    1 tsp of black pepper
    1 1/2 tbsp of chicken bouillon (or to taste)
    1 tbsp of oil to simmer sauce
    ~i did have extra salsa for the 3 dozens that we made, but you can enjoy pouring your salsa over your tamales when served!

    White older gentleman from Kansas here. I made these in my 8 qt. instapot yesterday, and will make another batch today. I added my homeade pickled red onions to the jalapeno and pepperjack filling, with green chile salsa that i made. The masa I made for some reason was light as whipped cream, it spread so easily, and I always add a cup of green chile salsa to the masa. I really appreciate the parchment paper tip, my instapot was absolutely clean after cooking these 45 minutes. Anyway, these were the absolute best tamales I have ever had, I ate 4 but i could have eaten 15. Absolutely the most moist and flavorful. I'll be adding chile rellenos, pinto beans from the instapot, and fidio sopa for friends today. Thank you so much for the video. P.S. The pickled red onions are a gamechanger.

    Question! The jalapeños that you put inside of the tamale do you boil them first or you just cut them up and they cook when they boil with the cheese??

    I have never made tamales of any kind, but between your video and "Cocina Identidad" Tamales de Rajas Con Queso y Salsa Verde video, I am going to give it a try. Cocina Identidad only uses pasilla chilies (no jalapeños) which I like, but he didn't use any garlic or cumin in the green sauce . I also like the ideas of having extra sauce to serve as garnish, with some sour cream. i love tamales with rajas and cheese, but when I buy them from street venders they are sometimes too spicy because of the jalapeño.

    Thanks for the tips about not putting the sauce hot if you plan to freeze some tamales. Also thanks for the tip 9n not to use the same water you cooked the Chile's & tomatillos to blend.finally to add some grren sauce on masa for flavor

    Those are not Pasilla chiles, unless they are dried. Fresh ones like that are called poblanos.

      Aww thank you so much! Yes you can make the salsa the night before, just make sure to refrigerate it when it cools down. And if you are only using the salsa for cheese tamales then you do not have to reheat it. Thank you for watching! Stay save!

      Yes if you are using it with chicken or any other meats always reheat it with the meat so it can get well incorporated and you’ll have a juicy tamale.

      Hello the maza and cheese I used in this recipe is not vegan. In the description box I have the ingredients for vegan. If you are not a vegan this recipe is perfect for you the maza is already purchase prepared which comes with lard.

      Yes it’s totally fine if your chicken are green sauce if they are red sauce I would recommend steaming them in a different pot

      Some say pasilla/Poblano

      I used 6 pounds of masa for 3 dozens

      I purchase my masa from Cardenas market or this place called amapolas in Los Ángeles.

    Great recipe. I'm making some puerco de salsa roja and these jalapeno with salsa verde. Is it ok to put both in the same pot?

      Yes you can add them together in the same pot cooking time cheese you can check them in 45 minutes and pork 1 hour or 1 hour 15 minutes
