The mutton will be cooked in its own juice and will be tender enough as I have seen others chefs cooking mutton the same wsy without a pressure cooker before. When I try thisathome, Iwould definitely use a pressure cooker. Cook the entire thing in the cooker body and after adding the curd, I would put on the lid and cook it until 3/4 whistles (depending on the quality of the mutton). Also, I think an extra dose of chilli paste at the end may enhance the flavour.
Name of the dish KANCHALONKA MUTTON so before releasing the pot from oven a spoon of KANCHA LONKA can be added. I tried your recipe and at last again I added a spoon of chili past and the the flavor of chili was coming out of it. Though the curd was controlling the spiciness. Thanks for sharing.
