I asked for your book, "Master in the Making" for Christmas, and I got it! I highly recommend this recipe.

I was blown away the first time as I'd never made it myself before - it was even better than I've had from restaurants. I found that I had to cook the chicken in batches to avoid having too much liquid in the skillet from the marinade. The last couple of times, I switched to cooking the chicken in the air fryer - came out great and was way easer/faster.
Sonny, any plans to release your cookbook in physical form? I would scoop up a hard copy in an instant, I just find it easier in the kitchen vs a virtual version.
Could also just copy and paste the text version he always puts in his description into something like MS Word then print it out and it would be free minus charge of paper and ink of course.

I reacquainted myself with Greek Islands this year, I made a LOT of chicken gyros, quick to prep, let 'em rest overnight and then super quick to cook, one of my fav chicken recipes.
The music at 19:52 makes me think of Downton Abbey, I'm excited to try that recipe. I've never had chicken tikka masala at home that's anywhere near as good as in the restaurants.

I'll be trying these, because your Greek chicken recipe (basil, garlic, olive oil marinade after beating the chicken with a hammer) is now a staple in our house, and usually results in marital love on account of my wife's love of "my cooking".... And the family LOVES rosemary salt popcorn
I love to double the Rosemary in your salt recipe and mix in the kosher salt by hand after processing the herb and lemon. Gives me more control with the seasoning.

For the coq au vin a good substitute for the rooster would be stewing hens. They're older and tougher chickens that are great for stews and longer cooking methods
Man those look great! A little thing I do with my roti/flatbreads: After they got some color to them in the pan I finish them off on the open flame (I also have a gas stove). It gives it that charred taste, really good (probably not good for you though?) so good though
I have made the Chicken Tikka Masala three times already. It takes forever, but it's so amazing. Pro tip; make a TON of it and freeze the rest. It tastes just as good when it's reheated. Next time I will be using the Sous Vide for the chicken and when I buy a dedicated freezer I will make 10kg of this at a time.
I rarely make the same dish very frequently, and this reminds me that it has been a hot minute since I’ve made coq au vin and it would be a nice weeknight meal if our temps ever decide to finally go in winter mode before spring arrives (I live in the south on the gulf). Just a quick question: I’m liking the addition of gelatin I’ve been adding to many of my stews and sauces of late and wondering if the coq au vin would benefit as well or would it really not add anything worth the bother. ?

I use MrMakeItHappen’s chicken pot pie recipe. It is very good and easier to make. 0:14 But this is the best looking pie I’ve ever seen. Is it much better and worth the effort? That is the question.
Only thing the Chicken Tikka needs, is the proper saffron pulao rice. It makes every curry better, help bulks out the meal along with the naan while also adding even more flavour (even better if you have a garlic naan like you did here). Just when you thought this dish couldn't have any more flavour, the rice doesn't get in the way, it just makes it better.
In the new year can we get some side dishes? Squash anyone? How many ways can Sonny make corn? Radishes recipes please.... 😔 My doc says less meat more veggies.
