I am in awe. Korean food is so magical. I am sure that hay was rice hay. There are many kinds of grass that have a kind of sweetness. Rice hay I'm sure gives that meat a fragrance you can't get from any other means. All grasses have sugar in their chemical composition. To be sure, rice hay has a high sugar content. The pork then would become 'bacon' like quality.

I think the hay is used to add some flavor scents, but primarily to create ultra high temperatures which then renders the fat very well for a distinct texture. They use "hay burn," in Korea, for hagfish as well.

FYI miso and doenjang (Korean soybean paste) are both fermented soybean pastes, but they different in processing. Doenjang is richer tasting and heartier - it can withstand stews. Miso is very delicate and can only be added to the soup at the last stage or you will kill its probiotic qualities. Personally I prefer doenjang for its versatility. Pailin (Hot Thai Kitchen) said that Thai soybean paste is closer to doenjang than miso. Mark I don't want this series to ever end!
Here in the UK, Monkfish used to be a bycatch, and thrown back in, until someone decided to try cooking it and realised that the tail meat especially, was very good, and unlike many other white fish, it holds together and so can be cooked differently, like in stews or broths, without falling apart. Monkfish is now about twice the price of salmon.

I am glad that you got to experience Kwanju. Korean Southeastern region is often said to be the best place to eat out in the nation. It developed a variety of unique cuisine because of the abundance of farmland, mountain ranges, and the access to yellow sea and south sea.
I was introduced to monkfish as the poor mans lobster. I interned at Citrus and one day had to painstakingly remove all of the veins from whole fillets of monkfish for presentation.

You been to Gwangju, my hometown! Next time you go to Gwangju you got to try Gwangju style duck stew or red bean soup, these are my nostalgic cuisines and many Gwangju people eat a lot! It’s rare seeing foreigners finding Yangdong Chicken and now I’m glad you tried it! most of people in Gwangju have it cuz they are very old and delicious! I remember my track meet when I was a child, my friends and I gathered around and ate Yangdong chicken until we couldn’t even move😂
Mark great job on this video and trying out all of the dishes like a local would. There is another TH-camr who would go to Korea and post videos on the following: Day 1: eat at a gas station and proclaim it is the best food he ever had. Day 2: eat at a McDonald's or KFC and sweat profusely as he stuffs his maw with his sodium filled hot dog fingers. Day 3: eat at the closest restaurant serving Chinese food even though he is is Korea.
Joseon-mu (Korean-white radish) is not daikon. It is round like an eggplant compared to the carrot shape of daikon. My Korean wife's friend recently picked up a couple cases that were misshapen so could not go to market and she gave us a few. I made pickle and kimchi jars of it and it was super yummy!
The last time I watched Mark was in 2020 during Covid (and that you werent able to go out much at that time). So when I came back here to this channel and saw this video's thumbnail, I was like- MY MAN WHENN DID YOU GET THis old... 😭😭😭 stay healthy please the world loves your channel💪

Interesting. In korea, fresh cod is 2-3 times more expensive than monkfish.

There is another TH-camr who would go to Korea and post videos on the following:
Day 1: eat at a gas station and proclaim it is the best food he ever had.
Day 2: eat at a McDonald's or KFC and sweat profusely as he stuffs his maw with his sodium filled hot dog fingers.
Day 3: eat at the closest restaurant serving Chinese food even though he is is Korea.
The pickled radish sounds delicious!! Chicken too!!

Joseon-mu (Korean-white radish) is not daikon. It is round like an eggplant compared to the carrot shape of daikon. My Korean wife's friend recently picked up a couple cases that were misshapen so could not go to market and she gave us a few. I made pickle and kimchi jars of it and it was super yummy!
